Kale Crunch Salad- Chick-Fil-A Copycat Recipe

I never had Chick Fil A salad. We do have one in town but Gabe and I don't eat fast food. I have LOTS of kale and wanted to give this a try. It's a make again!

Ingredients:

2 tablespoons olive oil

2 tablespoons cider vinegar

2 tablespoons maple syrup

2 teaspoons dijon mustard

1/4 teaspoons salt

4 cups finely chopped kale

1 cup finely chopped cabbage

1/4  chopped salted almonds

Directions:

In a bowl mix the first five ingredients

Add kale

With clean hands massage the kale with the combined five ingredients for about 2 to 3 minutes until wilted.

Add cabbage - toss to combine

Sprinkle with almonds

* Salted Almonds- preheat oven to 350. Line a baking sheet with parchment paper.

Toss almonds with 1 teaspoon vegetable oil and 1/4 tsp. salt

Spread the almonds on the prepared baking pan. Bake until golden brown and fragrant- or be a cheated like me and just buy a small package and toss them in. As you can see I sort of dumped them in the salad.

ROASTED BUTTERNUT SQUASH KALE SALAD WITH CHICKPEAS AND RAISINS

 Ingredients:

2 lb butternut squash

1-2 tsp avocado oil or olive oil

salt and pepper to taste

4-5 cups chopped curly kale

15 oz canned chickpeas

2 tsp avocado oil or olive oil

¼ tsp salt

1 cup raisins

honey for drizzling

¼ cup crumbled goat cheese

Crispy Chickpea Seasoning Blend

¼ tsp smoked paprika

¼ tsp garlic powder

¼ tsp ground cayenne pepper

⅛ tsp ground cumin

⅛ tsp black pepper

ZESTY ORANGE DRESSING

2 TBSP avocado oil or olive oil

2 TBSP orange juice (I juiced a mandarin orange)

2 tsp apple cider vinegar

⅛ tsp salt

⅛ tsp pepper

Directions:

Preheat oven to 400 degrees F.

Peel and cube your squash and toss with 1-2 tsp oil. Season with salt and pepper (I add about 1/8 tsp of each) and place in a single layer on a greased or lined baking sheet. Set timer for 15 minutes.

Next wash and dry your chopped kale. Add to a large bowl and drizzle kale with 1 tsp of your favorite healthy oil and a pinch of salt. Massage with your fingers until kale darkens in color and takes on a velvety texture.

Whisk together dressing ingredients and set aside.

Toss chickpeas ( make sure they are completely dry) with 2 tsp oil and season with 1/4 tsp salt. Place on a small baking sheet and spread them out a bit. Drizzle raisins with a teeny bit of oil and place on the opposite side of the chickpeas.

After the squash has been roasting for about 15 minutes add raisins and chickpeas to the oven and set timer for additional 20 minutes. The squash will continue roasting away as the chickpeas crisp up and the cranberries lightly roast and burst.

Once everything is ready, pull above from the oven and drizzle some honey over the raisins.

Next sprinkle the seasoning blend over the hot chickpeas and mix it all up to coat.

Top your kale with fresh from the oven squash, cranberries, and chickpeas and optional feta cheese. Serve with dressing for drizzling.

Scrambled Chickpea and Kale Tacos

 Ingredients:

6 (15-ounce) cans garbanzo beans, drained and rinsed

1/4 cup olive oil

1 medium onion, diced

2 medium red bell peppers, cored, seeded, and diced

2 1/2 teaspoons ground cumin

2 teaspoons ground turmeric

1 teaspoon garlic powder

1 teaspoon kosher salt

6 cups Kale, coarsely chopped

Taco shells

Directions:

Add half of the chickpeas to a food processor fitted with the blade attachment and pulse until broken down but not puréed. (Alternatively, place in a large bowl and mash with a fork.) Set aside.

Heat the olive oil in a 12-inch (or larger), high-sided skillet over medium heat until shimmering. Add the onions, stir to coat with the oil, and cook until soft, 4 to 5 minutes. Stir in the bell peppers, cumin, turmeric, garlic powder, and salt, and cook until the peppers are tender, about 4 minutes.

Add the mashed and whole chickpeas, stir to combine, and cook until they begin to soften, about 5 minutes. Stir in the kale cooking just until wilted, about 3 minutes. Remove the pan from the heat.

To serve immediately, divide the chickpea mixture between the tacos, filling taco with 3/4 to 1 cup of the mixture.

SO very good! Love using all the kale in Mei's garden 😀

Creamy French Lentils with Mushrooms & Kale

 Ingredients:

¾ cup French green lentils, rinsed

1 tablespoon olive oil

1 small onion

1 pound mixed mushrooms, stemmed and sliced

sea salt and ground black pepper, to taste

2 cloves of garlic, minced

2 teaspoons fresh thyme leaves, minced ( used dried)

2 tablespoons white wine*

2 teaspoons low sodium soy sauce

1 ½ cups vegetable stock

⅓ cup half and half

3-4 kale stalks, stems removed and leaves sliced (1 ½ packed cups of sliced kale)

Directions:

Bring a medium saucepan of water to a boil. Add the lentils to the water along with a pinch of salt. Simmer the lentils until they’re just-tender, about 20 minutes. Drain and set aside.

In a  medium soup pot, heat the olive oil over medium heat. Add the onions to the pot and stir. Cook the onions until slightly softened and translucent, about 3-4 minutes. Add the sliced mushrooms to the pot and let them sit for a full minute. Stir the mushrooms and season with pepper. Let the mushrooms sit in the pot for about a minute.

Stir the mushrooms until they start glistening slightly. Season the mushrooms liberally with salt. Add the garlic and thyme to the pot and stir. Once the garlic is fragrant, about 30 seconds, add the white wine to the pot. Stir the mushrooms. Add the drained lentils, half and half to the pot. Stir and bring the mixture to a boil.

Ladle half of the mushroom mixture into your blender pitcher, ensuring that you include enough of the liquid. Blend on high until completely smooth. Scrape the creamy blended mushroom mixture back into the pot. Add the sliced kale and stir. Bring the mixture to a boil and check it for seasoning. The texture should be like a thick and creamy stew and the kale should be slightly wilted..

Serve the creamy French lentils hot with toasts or other accompaniments of your choosing.

1 Tbsp. butter
1 medium red onion, halved and sliced
8 oz. white mushrooms, sliced
1/2 c. white wine ( subbed with chicken broth)

Kosher salt and freshly ground black pepper

1 lb. kale

Add the mushrooms and stir, then add the wine and some salt and pepper. Turn the heat to medium-high and cook until most of the wine has evaporated and the mushrooms are soft, for several minutes. Set aside.

Add the olive oil, vinegar, thyme and some salt and pepper to a mason jar and shake it to combine.

Remove the kale leaves from the stalks, then roll them up in batches and slice very thinly. Place the kale in a bowl. Add half the dressing and toss. Add the mushrooms, onions and bacon and toss again. Finally, add the goat cheese and more dressing if needed and toss. (Reserve any extra dressing for another use.)
