Marthas Banana Bread

 



Ingredients:

½ cup (1 stick) butter, at room temperature, plus more for pan

1 cup sugar

2 large eggs

1 1/2 cups unbleached AP flour

1 teaspoon baking soda

1 teaspoon kosher salt

1 cup mashed very ripe bananas( I use frozen bananas that were VERY ripe)

1/2 cup sour cream

1 teaspoon vanilla extract

1/2 cup chopped pecans or walnuts

Directions:

Preheat oven to 350°F. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter, and sugar until light and fluffy.

Add eggs and beat to incorporate.

In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture and mix until just combined.

Add bananas, sour cream, and vanilla; mix to combine.

Stir in nuts and pour into prepared pan.

Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes.

Let rest in pan for 10 minutes, then turn out onto a rack to cool.

Note: Good story why I made this.

Gabe still rides his bike. Not 26 miles like he use to but still active.

He did his ride while I was at the doctors office and he had a flat.

The bike is way to heavy to walk home especially since he was 4 miles from ours. He wanted to leave the bike at someones house ( no one he knew). He knocked on a few doors and went to another house and a man came to the door and told Gabe he could leave the bike in his yard. 

Gabe thanked him and told him he would be back in a hour to pick it up with the car after he walked home. The man told Gabe that no way was Gabe going to walk - he would drive him.

This man's mother died the night before knocked on this mans door. He told Gabe that he was in bed praying and then the door bell rang- maybe Gabe was God answer!

Mary's Blue Ribbon Banana Bread

 




Ingredients:

2 c all-purpose flour

3/4 tsp baking soda

1 1/2 tsp baking powder

1/2 tsp salt

1/2 c butter, room temperature

1 c sugar

2 eggs

1 1/2 c ripe banana pulp, mashed

1/4 c sour cream

1 tsp vanilla

Directions:

Sift dry ingredients together.

In a large bowl cream butter and sugar well.

Add eggs and beat well until light and fluffy.

Add vanilla.

Mix banana pulp with sour cream.

Add pulp alternately with dry ingredients to butter, sugar, and eggs mixture on slow speed.

Scrape sides as needed.

DO NOT OVER BEAT. Beat only until combined.  Stir with a wooden spoon to make sure it is all combined.

Grease and flour a loaf pan, 9X5X3. Bake at 350 degrees for 50-60 minutes.

Mei brings me bananas that Richard won't eat. They are always discolored  but I cut them up and put in the freezer.

I'm trying to clean out the freezer and pulled out the frozen bananas. Never made this recipe before thus it was a good time to give it a try.

Snickerdoodle Banana Bread




For the Banana Bread:


3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon vanilla extract

1 large egg

1 teaspoon baking soda

Pinch of salt

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 cup all-purpose flour

1 teaspoon cream of tartar

1 teaspoon cinnamon


For the Topping:

2 tablespoons sugar

1 teaspoon cinnamon


Directions:

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

Mix Wet Ingredients: In a large bowl, mix the mashed bananas with the melted butter. Stir in the vanilla extract and the egg.

Add Sugars and Dry Ingredients: Mix in the granulated sugar and brown sugar. Then, add the baking soda, salt, cream of tartar, and cinnamon. Stir until combined.

Add Flour: Gently fold in the flour until just incorporated. Be careful not to overmix.

Prepare Topping: In a small bowl, mix the sugar and cinnamon for the topping.

Add to Pan: Pour half of the banana bread batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over it. Add the remaining batter on top and sprinkle the rest of the cinnamon sugar mixture.

Bake: Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Cottage Cheese Banana Pudding





 Ingredients:

2 ripe bananas

1 cup cottage cheese (full-fat or 2%)

1–2 tablespoons honey or maple syrup (optional)

1 teaspoon vanilla extract

1 cup vanilla wafers or graham crackers, crushed

Directions:

Add bananas, cottage cheese, honey (or maple syrup), and vanilla extract to a blender.

Blend until the mixture is smooth and creamy.

In serving glasses or a dish, layer crushed wafers/graham crackers, followed by the banana-cottage cheese blend.

Repeat layers until the container is filled, ending with the creamy mixture.

Chill in the refrigerator for at least 1 hour.

Garnish with banana slices, cinnamon, or whipped cream before serving

Mei is always giving me bananas that Richard won't eat. I usually freeze them but then a recipe peaks my interest.

3-ingredient cottage cheese dole whip

 



Ingredients:

2 cups frozen pineapple ( save the liquid from the can pineapple)

1/2 frozen banana

1/2 cup cottage cheese


Directions:

Process the pineapple, banana, and cottage cheese in a food processor until smooth and creamy, scraping down the sides and bottom as needed. Add liquid if needed.

This is absolutely delicious! ★★★★★

Banana Bread Cookies




 Ingredients:

Cookie Base

1/2 cup  salted butter, softened

1/2 cup granulated sugar

1/2 cup  brown sugar

1 banana, mashed 

1 tsp vanilla

1 3/4 cups all-purpose flour

1/3 cup old fashion oat- put in food processor to make oat flour

1 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

Cinnamon and Sugar Mixture

1/3 cup  granulated sugar

2 1/2 tsp cinnamon

Directions:

Preheat the oven to 350° F . Line a cookie sheet with parchment paper or a silicone liner and set aside.

In the bowl of a stand mixer, cream together the salted butter, granulated sugar, brown sugar and overripe banana and vanilla for 1 minute, or until light in color and fluffy in texture.

Add the flour,  oat flour, baking soda, cinnamon, and salt to the mixer. Mix until a soft dough or thick batter forms.

Roll batter into small balls ( was easier with hand that are wet). The batter is pretty sticky.

Roll balls into sugar and cinnamon mixture.

Place on cookie sheet and bake for 9-10 minutes.

Let the cookies sit on the cookie sheet for about a minute or so.

Remove and place on cooling rack.

Mei gave me a bunch of very ripe bananas this morning. I saw this recipe awhile ago and it was on my list to make.

Mei came over to bring us Chili she made. Gave her cookies to bring home.

BTW- The cookies were good

Retro Cooky's Steak Pub Banana Bread (AKA Cake)


 I lived in Hempstead in 1980. This restaurant was on the corner on the street where I use to live. Went a few times but remembered the "cake".

Recipe was in Long Island paper Newsday.

It's just as good as I remember it 😉

Healthy Orange Julius





 Ingredients

2 oranges- peeled

1 large banana- peeled and frozen

1/4 to 1/2 cup almond milk

15 large ice cubes

2 teaspoons vanilla

Directions:

Add peeled oranges, frozen banana, ice cubes, your choice of milk (can sub orange juice for a sweeter smoothie), optional protein powder, and vanilla to a blender. This works best in a high speed blender, but can be made in a good quality standard blender.

Blend until the oranges are completely smoothie and the smoothie is thick and creamy.


Note: I had a original  Orange Julius in NYC when I was in my teens. It was the one and only time I had one since we didn't have any Orange Julius stores on the east end of Long Island. 

I picked up a bunch of oranges at a great price ( 1.99 a bag) and Mei gave me a few bananas Richard wouldn't eat.

 I remembered the Orange Julius and wanted to make this one.

Protein Banana Pudding- EASY





 Ingredients:

1 cup cottage cheese

1 banana

1 to 2 tablespoons maple syrup or honey

1/2 teaspoon vanilla extract

Directions:

Put all the ingredients into your blender

Blend until completely smooth. Scraping down the sides is needed..

Give it a taste to see if you need to sweeten it up a bit

Spoon into two jars and add to the refrigerator overnight.

When ready to serve add a banana and some crushed up vanilla cookies to the top.

Mardi Gras Smoothie


 



 Ingredients:

For the gold layer

1 cup pineapple

1 small banana frozen

1 cup plain Greek yogurt

½ cup water ( or to celebrate add vodka )

⅛ teaspoon turmeric

For the green layer:

2 kiwis peeled & frozen

3 cups fresh spinach

¾ cup water

For the purple layer:

1 cup blueberries frozen

⅓ cup raspberries or strawberries, frozen

1 cup water

Directions:

For the gold layer-

Add all of the ingredients to a blender in the order listed and blend until smooth. Transfer to a cup and stick in the freezer.

For the green layer-

Add all of the ingredients to a blender in the order listed and blend until smooth. Transfer to a cup and stick in the freezer.

For the purple layer-

Add all of the ingredients to a blender in the order listed and blend until smooth.

For the smoothie-

Pour the purple layer evenly into 3 cups. Pour the green layer over the purple layer. Top with the gold layer

And in 1892, the Rex parade theme "Symbolism of Colors" gave meaning to these colors. Purple Represents Justice. Green Represents Faith. Gold Represents Power.

Healthy Banana Mousse

 




Ingredients

2 tablespoons Almond Milk

1 tablespoon honey

1 teaspoon vanilla

1 and about a 1/4 of a banana cut up

1 cup fat free yogurt


Directions:

Put honey, vanilla, banana & milk in a blender. Blend until smooth.

Place the banana mixture in a bowl. Add the yogurt and stir until throughly combined.

Place in fridge ( covered) for about an hour.

Makes about 4 small dessert glasses.

Black Bottom Banana Bars

 




I noted on this recipe that it was SO good and to make it again. First made Sept. 21th 1995.  I made it many times and since. The recipe is on paper ( which I am now downsizing all paper recipes) I wanted to add to the blog for others to enjoy.

Note: This was the first time I made this recipe in many years. I knew it was good but when I tasted it -loved it! One of my neighbors ( Dillion) gave me a few plumeria cuttings and I wanted to thank him with something homemade. I didn't cut them into bars because I wasn't sure when they would eat them and keeping it whole hope it would stay fresher longer.

Ingredients:

1/2 cup butter or margarine - softened ( with butter so expensive- it's almost 7 dollars a pound, I used margarine)

1 cup sugar

1 egg ( room temp.)

1 teaspoon vanilla extract

1 1/2 cups mashed ripe bananas ( about 3 medium bananas)

1 1/2 cups AP flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cocoa

Directions:

In a large mixing bowl, cream butter and sugar. 

Add egg and vanilla, beat thoroughly combined.

Blend in bananas.

Combine flour, baking powder and soda, salt in a medium sized bowl.

Add the flour mixture to the creamed and mix well.

Divide batter in half

Add cocoa to half of the mixture.

Spread the cocoa mixture into a greased 13 x 9 x 2  baking pan.

Spoon remaining batter on top of the cocoa mixture. Swirl with a knife.

Bake at 350 degrees for 25 minutes or until the bars test done.

Cool

Makes about 2 1/2 dozen

Egg & Banana Pancakes




I'm not a pancake fan. Gabe isn't crazy about them either so when I saw this recipe on Flipboard I wanted to try it.  

I would make it again. It's super easy and the taste was pretty good. They weren't your typical pancake, more like a crepe.


Ingredients:

2 large eggs


1 medium banana


Directions:

Puree eggs and banana in a blender until smooth.

Lightly oil a large nonstick skillet and heat over medium heat. Using 2 tablespoons of batter for each pancake, drop 4 mounds of batter into the pan. Cook until bubbles appear on the surface and the edges look dry, 2 to 4 minutes. Using a thin spatula, gently flip the pancakes and cook until browned on the bottom, 1 to 2 minutes more. Transfer the pancakes to a plate. Lightly oil the pan again and repeat with the remaining batter.

Caramel apple smoothie

 




Ingredients:

1 frozen bananas

handful of spinach

2 dates 

1/2 green apple

cinnamon

splash of milk- your choice of milk

almond butter ( I used a caramel almond butter)


Directions:

To make it, blend frozen bananas, spinach, green apple pieces, dates,  cinnamon, milk, almond butter and ice. Then top with more apple pieces and cinnamon, and enjoy!

DELICIOUS!

3-Ingredient Watermelon Sherbet Recipe




Ingredients:

6 cups seedless watermelon cubes, frozen

1/2 cup sweetened condensed milk

1 cup frozen bananas


Directions:

Put the frozen watermelon cubes, frozen bananas and sweetened condensed milk into a blender. Blend for 4 to 5 minutes or until thoroughly combined and creamy.

Pour the mixture into a loaf pan or container. Freeze for at least 2 hours.

Pink Lemonade Nice Cream

 



Ingredients:

3 medium ripe bananas, sliced and frozen


⅔ cup fresh or frozen raspberries


1 tablespoon lemon zest


2 tablespoons lemon juice


Directions:

Place bananas, raspberries, lemon zest and lemon juice in a food processor. Process until smooth.

Creamy Watermelon Smoothie




Ingredients:

2 cups chopped seedless watermelon, plus watermelon wedges for garnish

1 small banana ( I had a frozen banana- which I tossed in)

¾ cup frozen strawberries

1/2 cup plain Greek yogurt

2 teaspoons honey

Directions:

Add all the above to blender.

Blend until creamy.


It's been SO hot here. Watermelons have been on sale and thought I would give this a try.

2 Ingredient Sherbet Recipe-Quick and Easy No Churn!

 



Ingredients:

1 – 14 oz can of sweetened condensed milk
4 to 5  frozen sliced bananas* ( you can use any fruit)

Directions:

1. Add bananas and half the can of the sweetened condensed milk to your blender or food processor and blend.

2. Give the mixture a taste and add more sweetened condensed milk as needed, continue blending until creamy. I used the whole can.

3-Serve the sherbet right away as soft serve or spread into a shallow dish and freeze for an hour or two to achieve firmer more ice cream like consistency

WOW! This is delicious 😀 I always have some frozen fruit and plenty of condensed milk. Can't wait to try other fruits- peach, strawberry( use 4 cups) and blueberries.

Perfect to cool down on a hot day and we have been getting lots of them.

Orange Creamsicle Smoothie




Ingredients:

1 frozen ripe banana, previously peeled & sliced
2 teaspoons pure vanilla extract
1/2 cup fresh orange juice
3/4 cup vanilla Greek yogurt
1 orange, peeled and sliced

optional: 2 teaspoons orange zest


Directions:

On high, blend the frozen banana chunks, vanilla, and orange juice together until thick, creamy, and smooth – about 3 minutes. Scrape down the sides of the blender as needed. Add the yogurt, orange, and orange zest (if using). Blend until combined


This was SO good!

COPYKAT OTIS SPUNKMEYER BANANA NUT MUFFINS



Ingredients:

1 c. mashed ripe bananas (about 2 average size)
1 (18.25 oz.) pkg. banana cake mix (can use yellow cake mix) The yellow cake mix I used was 15.25 ounces thus I used the upsizer from the recipe which was posted
1 (4 serving size) pkg. instant banana pudding
4 eggs
1/2 c. vegetable oil
3/4 tsp. ground cinnamon
1/2 c. water
1 tsp. banana extract

1 c finely chopped walnuts

Directions:

Preheat oven to 350 degrees. 

Blend all ingredients together until smooth, about 3-4 minutes. 

Fill baking cups 3/4 full and bake @ 350 degrees about 20 minutes until done. Check for doneness with a toothpick inserted into top of muffin, if the toothpick comes out clean the muffin is done. 

Store muffins if there are any left in a airtight container. Using jumbo pans, the recipe makes 10, baked for about 30-35 mins.

The recipe was in one of my old files-Source: copykat.com-shared by hollyga on the TOH board). That board had some really good recipes.
