WATERMELON SALSA

 




Ingredients:

2 cups watermelon, diced

1 cup fresh strawberries, diced

1 jalapeno, seeded and diced

1/4 cup cilantro, chopped

1 tablespoon basil, chopped

1 tablespoon mint, chopped

1 tablespoon lime juice

2 tablespoons honey, optional

3 tablespoons red onion, diced small

Directions:

Place all the ingredients together in a bowl and stir gently to combine.

You can serve immediately or place in the refrigerator for an hour before serving.

Serve with chips, crackers or on tacos.

Watermelons are back in season ( sort of). No local ones yet but guess the ones in the store are from south Florida.

I love watermelon but this one wasn't sweet and wanted to make something different.

My little jalapeno actually made it through the winter. Had to cover it each frost but now able to have fresh jalapenos.
