Ingredients:
3 to 4 large Florida tomatoes, sliced 1/4-inch thick
1 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1 tablespoon garlic, minced
3 tablespoons fresh basil, roughly chopped
1 tablespoon olive oil
Sea salt and fresh ground pepper, to taste
Directions:
Preheat oven to 400 degrees. In a small bowl combine the oil and garlic. Season with salt and pepper. Place slices of tomato on sheet pan, brush with oil mixture, and sprinkle even amounts of cheese on each tomato slice. Bake for 8 to 10 minutes or until cheese is melted. Top with chopped basil and serve warm.
I joined a Florida Recipe group on FB and this is one of their recipes.
Yum !!! Sounds so good. A nice thick tomato slice would be great. Will have to find a good Jersey tomato.
