Ingredients:
1/2 pound boneless chicken breast- cut into strips
2 tablespoons cornstarch
3 tablespoons soy sauce *
1 garlic clove- minced
1 tablespoon oil ( I used olive oil)
1 medium onion- sliced
3/4 cup water
1 package stir fry frozen veggies
1/2 teaspoon each ginger, sugar and vinegar
Directions:
Place chicken in a bowl. Combine 1 tablespoon each of cornstarch and soy sauce; add garlic.
Pour over chicken, mixing to coat well and let stand 15 minutes.
Heat 1 tablespoon oil in a skillet or wok.
Add chicken and stir fry over high heat for about 2 minutes, until golden brown. Remove chicken and place on a dish with a paper towel. Reserve for later.
Heat remaining oil in the same skillet, add onion and stir fry 2 minutes.
Add 1/4 cup of the water and vegetables to the skillet. Bring to a boil, reduce heat and simmer for 2 minutes.
Combine remaining water, cornstarch and soy sauce; add ginger, sugar and vinegar.
Pour into pan, add chicken. Cook and stir until thickened- about 2 minutes.
Makes about 4 servings
This can be served over rice.
I originally made this recipe on August 19th, 1986. The recipe was from an ad from either Kikkoman or Birds Eye. I cut it out and taped it in a cookbook I used a lot.
I am going to try to add the recipes I have taped in the cookbook to the blog.
I'll eventually will give the cookbook away.
* Kikkoman soy sauce recipe used in original recipe. I used Walmart brand
I think i used to make this recipe. So glad you put it on here. I had so many recipes cut out and pasted in a scrapbook. It was so stained and the recipes were so yellow. When I moved, I ended up throwing it out. So sorry I did, but thanks to you, I can make this one again. Yum !!! Looking forward to seeing what other treasures you have taped.
