Spinach, carrot and cheese fritters
Ingredients:
1 egg
3/4 cup plain flour
1 carrot, grated
2 cups baby spinach- blanched and chopped finely
1/2 cup shredded cheese ( I used Mexican blend)
olive oil for frying
Directions:
Mix all the ingredients together except the oil.
Preheat the olive oil for frying in a saucepan over medium heat.
Drop tablespoonfuls of the mixture into the oil and flatten slightly.
Cook each fritter for 4 minutes each side, or until golden.
Drain on paper towel.
Freeze or serve hot or cold.

I love fritters. This one I must try. Sounds like something my daughter would like. Thanks for sharing this. I always check out your recipes. Just made the gummies yesterday....they came out so cute. Will send you a pic.
