Baked Blueberry Banana Oatmeal Cups




I've been picking and enjoying blueberries for over two weeks. This recipe is baked breakfast blueberry but instead of being baked in a baking dish it's in cupcake liners.


Ingredients:

1 cup blueberries (fresh or frozen)
2 eggs ( next time I would use only one egg)
2 cup rolled oats, old fashioned
2 bananas, medium ripe
1 cup brown sugar
1/4 tsp. Saigon  cinnamon 
1 teaspoon vanilla extract
1 teaspoon baking powder



Directions:

Preheat oven to 400 F.
Line standard muffin pan with 12 liners and set aside.
In a medium bowl, mash banana with a fork.
Then beat in the eggs. Add rolled oats, baking powder, brown sugar and vanilla
Mix well
Gently fold in the blueberries

Divide the batter into the prepared muffin pan and bake for 15 to 20 minutes.
