Kale Sweet Potato Pie- Gluten Free
Mary loves stopping at farm stands and picked up a huge bunch of kale and told me to take half of it home.
Now what to do with it? Smoothie? Kale chips? I wanted something different and ta-da I found a blog called Purely Twins that had this recipe.
I adapted it and added some mozzarella and Italian spices.
Ingredients:
2 eggs - well beaten
1 medium to large sweet potato cooked
4 cups fresh chopped kale ( added to food processor)
1/4 cup shredded mozzarella
1 tsp. Italian Blend seasoning
Directions:
Preheat oven to 350 degree F or 177 C
Prepare a pie pan with non stick spray and set aside
In a large bowl add the eggs and beat well.
Add chopped kale, sweet potatoes, mozzarella and spices and mix until thoroughly combined.
Spread the kale mixture into the pie dish. Place in preheated 350 oven and bake for 25- 30 minutes.

I've never had kale before except in soup. this sounds interesting, almost like quiche. I like your addition of Mozzarella & spice.

ReplyDeleteI found your recipe through the GF linkup on vegetarian mama. I have never used kale for anything other than smoothies or salads. I already have have sweet potato at hand. Will pick up the kale and give this recipe a whirl. I might have to improvise on the spices, since I don't have the spice mix though. Let's see. Sounds interesting. :)
Hi Shreyashi- I enjoyed this, hubby would not touch it- LOL. You don't have to use Italian herbs- use what you like and the same with the cheese.

That's a perpetual problem with men. My husband runs away whenever he sees any green food.

That's the truth! The only green veggies hubby eat- iceberg lettuce and canned peas!
DeleteI made Kale chips but guess I didn't add them to the blog. They are so easy-take a bunch of kale- wash and dry.Tear up the leaves into 1-2 inch piece. Drizzle with olive oil- use about 2 tablespoons and mix with your hands so all the kale is coated. Put the leaves on a cookie sheet and don't overlap them and bake at 275 for 10- 25 minutes. You can tell when they crisp up.
I love them and gonna make them again this weekend.
