Cauliflower Pizza Bites




Found this Recipe on Health DAMY.


This would be a nice little side dish for Thanksgiving, good way to get the kids to eat their veggies!


Ingredients:

2 Cups Grated Cauliflower (washed, dried and grated using a food processor )
1 egg
1 Cup 1% Cottage Cheese (drained)
1 Tsp Oregano
2 Tsp  fresh parsley
1 clove garlic- minced
1 Tbsp. Peanut Oil 
1-2 Tbsp Frank’s Hot Sauce 

Directions:

Pre-heat oven to 450 F. 

Prepare the mini muffin tin using a cooking spray.



In a hot frying pan stir fry the “cauliflower rice” until the cauliflower is slightly translucent (about 6-8 minutes). Place in a medium size bowl and let cool.

Add the egg, cottage cheese, oregano, parsley,garlic powder, peanut oil, hot sauce to food processor and blend until smooth.

Combine the mixture in the food processor with the “cauliflower rice”, which is in the medium size bowl. Blend all the ingredients until  combined.

 Spoon mixture into  prepared muffin cups and press down evenly and firmly to make sure the mixture sticks together. 

Place in your oven and bake for 25-30 minutes.

Remove the pan from the oven to a wire rack and let the pizza bites cool in the pan for about 5-10 minutes. Run a knife around the edge of each and remove from the pan. If you try to remove from the pan when  hot, they will fall apart.

Once cool remove from muffin tin. Run a knife along the edge.

Add pizza or pasta sauce for dipping .

  3. This looks and sounds very interesting. I am not a fan of cauliflower cooked, but this looks like a great way to hide veggies for kids. My granddaughter needs to eat more veggies, and they are looking for ways to hide them.....I shall pass this on.
