Skinny Pumpkin Whip








It's  pumpkin time again! I found this delicious  recipe on
Live Laugh Rowe.

Easy to make and a low calorie treat- YUM!

Ingredients:

1 oz. package Jello Sugar Free Instant Butterscotch Pudding
1-1/2 cups skim milk
1 cup pumpkin
1-1/2 cups fat free cool whip
1 teaspoon pumpkin pie spice
½ teaspoon caramel extract ( or you can use vanilla)

Directions:

 Stir the pudding mix and milk together in a large bowl with an electric mixer until thick

Stir in the pumpkin, pumpkin pie spice and caramel extract.

Fold in cool whip.

Cover and chill for at least 2 hours.

Garnish with cool whip.

  1. I like that! What a great looking and easy fall dessert...a bonus that it's light too. I haven't started baking with pumpkin yet, but you're right-it's definitely that time of year. I love pumpkin and that dish of heaven looks delicious.

  7. I have been looking all over for Sugar Free Butterscotch pudding!! I was beginning to think it wasn't made, now I'll go look again. I have a recipe for a layered pumpkin dish that I wanted to make sugar free for a diabetic friend. Your recipe looks yummy, maybe I'll use yours instead. Visiting from Rattlebridge Farms linky.

    1. Carole, I bought mine in my back back home(NY). Amazon has it, I looked it up but you have to buy quite a few. If you can't find it let me know and I'll look around my area in Florida. It is hard to find.

    1. LOL Sarah! I usually adapt recipes and the only thing I changed on this was the caramel extract. Love that stuff!
