Applesauce Oatmeal Cookies
I made gundrops for the boys this summer. There was a cup of applesauce left and I wanted to find something to make.
Six Sisters Stuff posted this recipe in 2013 and I knew the boys would like it and so would we!
This is a soft cookie with lots of apple flavor.
Ingredients:
1 cup applesauce ( used sweetened applesauce)
1 cup brown sugar
1/2 cup butter, softened
1 egg
2 cups flour
1 cup oatmeal ( used old fashion oats)
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon ( used Saigon cinnamon)
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 cup chocolate chips ( didn't use)
Directions:
Preheat oven to 375 degrees
In a large bowl mix together applesauce, brown sugar, butter, and egg.
In medium size bowl mix the flour,oatmeal, baking soda, salt, cinnamon, nutmeg and cloves. Whisk until everything is combined.
Add the flour mixture to the applesauce mixture. Stir until combined. If you are adding the chocolate chips DO NOT add yet.
Dough should be firm (add more flour if needed).
Fold in the chocolate chips and scoop heaping tablespoonful onto a greased cookie sheet. Bake for 13-15 minutes (until golden).

These cookies look so delicious. Your cookies always look so perfect. I never can get each one the same size. I have used applesauce in baking before instead of oil. This sounds like a great one. Going to see what ingredients I need to buy and make them soon.

Deletethey look wonderful and I think I would leave out the chips as well. sometimes a cookie doesn't need chocolate. wow, did I just say that?
ReplyDeleteMyra, I use a scoop to make most of my cookies because that way they're all uniform in size.
I would of added the chips but didn't have any in the house. Didn't want to buy to much before we left.

ReplyDeleteI have a feeling Bob would be looking for some raisins in these...that might be good. I'd like them the way you made them....or with chocolate chips....or nuts....oh heck I LOVE oatmeal cookies any old way I can get them. :)
You know me, I can't let anything go to waste and that applesauce sitting in the fridge had to go into something!

DeleteThese look so good. My diabetic nurse said I shouldn't use the brown sugar and not even the splenda brown sugar. I'm not sure what a safe substitute to use.
