Sue's Potato Au Gratin - From Mrs. Wilkes Cookbook

Linda, a member of the TOH recipe board added a post - Mrs. Wilkes Recipes. I saw a few that I knew I wanted to try and didn't have the cookbook thus took it out from my local
library.

The cookbook was a interlibrary lone and came from the Harborfields Public Library in Greenlawn, NY.

I've been  to Savannah and ate at Mrs. Wilkes restaurant. There's always a long wait to get in and then seated family style around a large round table. I don't have a problem socializing and it was nice to meet people from different parts of the country.



The cookbook noted that this recipe is a signature dish of Susie Mae Kennell, who developed it.

6 cups potatoes, peeled and sliced thinly
1 cup mayo
2 tablespoon prepared mustard( Gabe only likes Gulden's Spicy Brown ,so I used that)
1 tablespoon white vinegar
1 medium onion, grated
1/2 cup grated cheddar cheese.

Add the potatoes to the water and boil until tender, drain.

Preheat oven to 350 degrees.

Mash potatoes until all lumps are gone.

Add mayo, mustard,  vinegar, and onion.

Place in a casserole dish and top with cheese.

Bake for about 15 minutes or until mixture bubbles and the cheese had melted

I halved the recipe since I knew Gabe would be the only one eating it. I'm not a fan of potatoes but you know what? These are really good! I'll be making them again.

  1. I have one of the Mrs. Wilkes' Boarding House cookbooks-not that one though-mine has a kind of gold-ish cover. I have it in my pile of "read throughs".....I picked it up at a book sale a while ago.

    Now I never would have thought of adding mayonnaise, mustard and vinegar to mashed potatoes....and you can't go wrong with cheese on top. I'm always up for trying something new and different-and I do love potatoes-maybe not as much as Gabe does, but there are times I'd be happy eating potato and nothing else for dinner-especially mashed-and Bob doesn't like them that much...sigh.

  2. Hey Carol- I had Greek yogurt which I thought of adding in place of the mayo but Gabe knows when I do a switch and he hates any type of yogurt.

    If you make it and sub the mayo for the yogurt, let me know how it came out.

    There was no way I could get a good picture of this dish, I need a dark pan! If you make it Bob could make this look SO much better.:-)

    1. You know what Linda? I think I'll go half and half when I make this-half mayonnaise and half Greek yogurt-Bob doesn't mind it (he thinks it's sour cream.............shhhhhhhhhhhhh)........ :) . Potatoes are SO hard to photograph-it's that blah color. He had a heck of a time the last time with the Rustic Potatoes I made a while back-I had to plate them the next day and photograph them because no matter what he tried straight out of the oven it didn't work.

      Isn't food photography fun??????? Hahahahaha. Hey-your photo makes me wanna grab a SPOON!

    I am a potato gal through and through. I thought the mayonnaise was an interesting ingredient as well.

    They sure do look wonderful. But then cheese makes anything taste good. I sure would like to try this one.
