Maple Ginger Glazed Chicken

This is a recipe that Carol reviewed on TOH. Her hubby takes photos of her creations and if you check out the link you can see Bob's fantastic photo.


It's such an easy and quick recipe that I know I'll be making it again and again.


1/4 c. pure maple syrup


1 Tbsp. lite soy sauce

1 tsp. grated fresh ginger

2 cloves garlic, minced

1/8 tsp. cayenne pepper

4 boneless, skinless chicken breast halves (about 1 1/2 lb.)

Salt and pepper

1 Tbsp. vegetable oil
 

Add maple syrup, soy sauce, ginger, garlic and cayenne in a small bowl and mix well.

 
 With paper towels pat the chicken dry and  season with salt and pepper.
 
Heat vegetable oil in a large pan over medium-high heat until just smoking.  Add the chicken; cook until golden brown, about 5 minutes per side.
 
Reduce heat to medium-low; add syrup mixture to pan.  Thicken the sauce with some cornstarch/water mixture till it was a nice consistancy. Simmer, turning chicken until glaze is slightly thickened and chicken is cooked through, about 2-4 minutes.

  1. Gm Everyone, Finally getting a visit in. My I have missed much. Great posts and recipes. Max is so happy. Had to chuckle at the yellow blanket. Talk about profiling. That chicken looks wonderful. It's a lot like the one I made last night. Maple syrup is replaced with honey and a few other ingredients are added. Alice Springs Chicken. Very Good. I will give it a try. Thanks Carol. We eat a lot of chicken.
    Sorry about your friends furbabie. It's always so sad and what a heart break.

  2. Hi there Janie.....nice to "see" you this morning. I had to check out the TOH link, and boy the picture is making me drool. This is another recipe I will have to make. It sounds alot like a favorite salmon recipe my family used to love. I don't cook much anymore, since it is only me, but sometimes I cook some of my old favs and freeze them. One that I make, is a chicken recipe similar to this one. It is made with orange marmalade and garlic and ginger. I love the sauce and always make extra to have over rice. Carol, you sure do write good reviews. I enjoyed reading it.

  3. I remember that one! We loved it and I loved how quick and easy it is to make. Nothing like maple syrup, soy sauce, ginger and garlic to get together and have a party........and the cayenne brings the noisemakers! :) I'm so happy you and Gabe liked it Linda. I haven't made it in a long time-I keep finding new chicken recipes I want to try!

  4. Myra, That recipe does sound outstanding and I bet it would be great with Pork. Carol's recipe would also go very well with Pork.

    Our sun finally decided to show its face today. More rain maybe moving in towards the end of the week. By then even the flowers will be revolting. Everything is so soggy.

  5. Here is the recipe for the Orange Ginger Chicken.....I just love the sauce.

    1 1/2 tsp sesame oil

    4 4 oz skinless boneless chicken breast halves

    1/2 cup orange marmalade

    3 Tbl low sodium soy sauce

    1 Tbl minced ginger root ( I buy the ginger already grated in the jar)

    1 tbl water

    2 cloves minced garlic.

    Heat Oil...add chicken breasts. Cook 6 minutes on each side til cooked through. Add rest of ingredients, and cook for 2 more minutes

    Very simple.....just like me :-) !!


    We have had enough rain to last me the year. The US Open is being played about 5 minutes from me, and boy are they soggy.
