Ingredients:
1/2 a head of medium cabbage (about 4 cups)
1 big carrot shredded (1 cup)
1 bunch of green onions
a packet of rice paper sheets
Directions:
Chop the cabbage finely lengthwise. Wash it, set it aside to drain.
In the meantime, grate the carrot and chop up the greens from the green onion.
Once the cabbage is nice and dry combine it with the grated carrot and chopped green onions in a mixing bowl. I also sprinkled with garlic powder.
I sauté the cabbage mixture just a few minutes to soften it up.
Place a rice paper in a small amount of water to soften them up. They shouldn't be super soft when you take them out of the water. Place softened rice paper on a clean cutting board or surface. Add a handful of the vegetable stuffing in the center. Lots of videos on how to roll on You Tube.
Fold the bottom part of the sheet over the stuffing and then cover with the other two sides and bring it to the center.
Roll it until you reach the top part of the sheet.
Once rolled place on rack in the air fryer. I spray with grapeseed oil ( which I pick up in Aldi's).
Preheat fryer to 430 degree and "fry" for about 8 minutes on each side.
I enjoyed these so much that I made a batch with eggs for breakfast. Scrambled up a few eggs and added green onions and peppers. Sprayed with grape seed oil and popped in air fryer.
Myra here again. Another interesting recipe. Since I don't have an air fryer, I am guessing you can fry these in a pan. Never bought rice paper. I have seen them in Aldi and also have seen rice noodles. Wonder if you could cook up the noodles and mix the mixture in there.
