Ingredients:
1/4th of a watermelon ( use more for if desired)
Goat cheese
Few tablespoons of crushed pistachios
drizzle of honey
Directions:
Slice watermelon thin.
Crumble goat cheese and spread over the watermelon slices along with the pistachios.
Drizzle with honey
Picked up my last watermelon till next season. I wanted to make something different. I really liked this. Made a nice light lunch
