Ingredients:
1 large avocado, halved, seeded, peeled, and cut up
1 cup half-and-half or light cream
⅔ cup powdered sugar
½ teaspoon finely shredded lemon peel
⅓ cup lemon juice
Directions:
In a blender combine avocado, half-and-half, powdered sugar, finely shredded lemon peel, and lemon juice. Cover and blend until smooth. Pour avocado mixture into a 2-quart square baking dish. Cover and freeze for at least 4 hours or until firm.
To serve, let stand at room temperature for 15 minutes. Cut into squares and divide among serving bowls. If desired, garnish with lemon peel strips and/or mint leaves.
As you can see from the photo above Florida Avocado's are HUGE! I picked up two ( on sale) and wanted to try this recipe.
We had the coldest Christmas ( a record cold in Florida) and it's in the 80's now. Good time to give this one a try.
This looks like something my d i l would like. She eats lots of avocado. Going to copy this one and send it to her.
