Homemade Ginger Ale

 



Ingredients:

1 1/2 cups chopped peeled ginger (7 ounces)

2 cups water

3/4 cup sugar

About 1 quart chilled seltzer or club soda

About 3 tablespoons fresh lime juice

Make syrup:

Step 1

Cook ginger in water in a small saucepan at a low simmer, partially covered, 45 minutes. Remove from heat and let steep, covered, 20 minutes.


Step 2

Strain mixture through a sieve into a bowl, pressing on ginger and then discarding. Return liquid to saucepan and add sugar and a pinch of salt, then heat over medium heat, stirring, until sugar has dissolved. Chill syrup in a covered jar until cold.


Assemble drinks:

Step 3

Mix ginger syrup with seltzer and lime juice (start with 1/4 cup syrup and 1 1/2 teaspoons lime juice per 3/4 cup seltzer, then adjust to taste).


Cooks' note:

Ginger syrup keeps, chilled, 1 week.

After my second cataract surgery I felt sick when I got home. I don't know if it was because they gave me to much anesthesia or just my nerves.

I had a bottle of ginger ale from Trader Joes. That stuff is amazing. Once I had some I felt better.

I wanted to make my own. Mei grows ginger and asked her for a few of her roots.

This recipe taste just like the ginger ale from Trader Joes!

  1. This is the recipe you were telling me about before. Sounds great. Mei must have a huge garden. You are lucky to have her to give you fresh vegetables and herbs.

    1. The ginger she grows comes from Thailand- It's very different from the ginger we get in the store. I made it again with Publix ginger and it has a stronger taste.
