Ingredients:
6 large eggs
⅓ cup mayonnaise
2 tablespoons sweet India pickle relish
2 teaspoons yellow mustard
1 teaspoon white sugar
1 teaspoon lemon juice
1/4 teaspoon salt
If you want you can add some hot sauce to taste
Directions:
Cover eggs with water in a saucepan, bring to a low boil, let boil slowly for 5 minutes. Remove from heat and let stand, covered, for 5 minutes.
Transfer eggs to ice water to chill for 5 minutes; peel. Grate eggs into a medium mixing bowl and add mayonnaise, relish, mustard, sugar, lemon juice, salt and hot sauce. Mix well.
Chill in the refrigerator for at least 30 minutes.

I've wanted to make this recipe for awhile. Not that long ago eggs were cheap and naturally I couldn't find the recipe. They have come down in price from a high of 3.29 a dozen. I wonder if we will ever see 99 cents a dozen again.
This is a good recipe. Will make it again.
LOL.............You know I will pass this one. Even reading it makes me queasy.......now if it was chocolate...you know I would for sure love it.

DeleteLove egg salad, and I always use pickle relish! I usually add onion powder too. .
