*This recipe is from Murder with Lemon Tea Cakes by Karen Rose Smith ( these look like cookies to me, I followed recipe to a T )
Ingredients
Preheat oven to 375 degrees
1 cup butter, softened
1½ cups granulated sugar (plus 2 tablespoons to garnish the baked cookies)
3 eggs
2 teaspoons lemon zest
½ teaspoon salt
2½ teaspoons baking powder
1 teaspoon lemon extract
3 cups flour
Directions:
Cream softened butter and granulated sugar until fluffy.
Add eggs and beat until smooth.
Add lemon zest and mix again.
Add salt, baking powder, and lemon extract, and mix well with mixer.
When you add the flour next, do it in ½-cup portions so batter is thoroughly mixed and smooth.
Drop rounded tablespoons of batter onto a well-greased cookie sheet.
Make sure there is space around each cookie because they grow.
Bake at 375 degrees for 11–12 minutes until golden brown around the edges.
When you remove cookies from the oven, sprinkle with granulated sugar. Then quickly remove them from the pan and cool.
Made these to give out for Valentine's Day. The cookies on the right were rolled in plain sugar. I had valentine sprinkles so I rolled a bunch in them to make them look festive.
FYI- They were a HUGE hit at the gym!
Happy Valentine's Day Linda, and to all who check in here. These cookies look so good. I imagine tea cakes are a lot like ccokies. Are they soft?? I signed up for Overdrive, so now I can look into downloading the books you mention. It will take me some time to get the knack of how to do this, but I will do it. I noticed most of the books that I want to download, are not available, so I will have to put them on hold. That's ok, I have lots to read. I went to the 1/2 price store and picked up 3 books, and still have 4 here I bought before I haven't read. Plus all the Kindle books I have to read. Anyway, I think your cookies look wonderful. ReplyDeleteOverdrive is VERY easy- been using it for years.
I'm on the waiting list for many books, it usually doesn't take that long.
The girls at the gym loved the cookies, Ae-yun didn't try them yet.
They are soft BUT you have to reduce the cooking time. When you take them out leave them on the sheet for about 5 mins.
I bet the cookies were a hit at the gym. I am now reading one of the books I bought at the store. Then I will start on overdrive.
