Stuffed Cabbage Soup




 Ingredients:

2 tablespoons canola oil

1 ½ pounds lean ground beef

4 cups chopped green cabbage

2 cups chopped yellow onion

1 ¼ cups chopped carrots

1 cup chopped celery

2 tablespoons light brown sugar

1 tablespoon smoked paprika

1 teaspoon salt

½ teaspoon ground pepper

¼ teaspoon cayenne pepper

1 (15 ounce) can no-salt-added tomato sauce

4 cups unsalted chicken broth


Directions:

Heat oil in a large heavy pot over medium-high heat. Add ground beef; cook, stirring often, until the meat is cooked through and starting to brown slightly, 6 to 7 minutes. Add cabbage, onion, carrots and celery; cook, stirring often, until the onion is translucent, about 5 minutes.

Add brown sugar, paprika, salt, pepper and cayenne to the beef mixture; cook over medium-high heat, stirring constantly, until the spices are toasted, about 1 minute. Stir in tomato sauce and broth, scraping the bottom of the pot with a wooden spoon to release any browned bits. Bring the soup to a boil over medium-high heat

 Reduce heat to low; cover and cook until the rice is tender, 30 to 35 minutes. If desired, sprinkle with parsley before serving.

  2. Is this essentially the deconstructed version of Polish Cabbage Rolls (Golobki)? I grew up with my grandma making golobki and I've always wanted to try it, but it seems intimidating. Maybe this soup will help me ease my way in?

    1. It's SO easy! All one pot. Onions and celery in first then meat. I didn't have any fat from the meat I use veggie burgers.

  3. This is one that I know I will love. Stuffed cabbage is one of my favs. I also have a recipe for cabbage soup, which doesn't have meat in it, but this one sounds good also. Yum

    1. You are gonna love why I made this now. We had a turkey a few days ago. It was one of the turkeys I picked up on sale. As you know we went to Mey's for thanksgiving and the turkey I picked up was taking way to much in the freezer. Made broth from the bones. Had cabbage left in the fridge. I also had a package of Beyond Burgers ( also on sale) and tossed that in the soup. I don't know what grocery prices are like in your area but here everything has gone up tremendously. This turned out to be a nice frugal meal!

    2. You should write a book on how to save money and not waste anything. You are the BEST !! I went to the store today, but only to buy stuff I needed to make the recipes I picked out of my file. I have been in a cooking mood, and when I make stuff, I keep one portion and the kids get the rest. I did buy the ingredients for the cabbage soup I had in my folder. Haven't made it in years.......
