Depression Era Brown Sugar Cookies




Ingredients:

1/2 cup shortening ( used butter flavor)

1 cup brown sugar, packed

1/2 teaspoon vanilla

1 egg ( room temp)

1 3/4 cups all purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

Directions:

Preheat oven to 375 degrees


Mix shortening and brown sugar in a medium bowl.  Stir to blend well.  Add the vanilla and egg and mix until creamy.  Mix all the dry ingredients together then add to the sugar mixture.  Stir until well mixed.  On a sheet of waxed paper roll the dough into a log.  Wrap it with parchment paper and put it in refrigerator  until it is firm.  Slice about 1/4 inch for each cookie.  Place about 2 inches apart on a greased cookie sheet.  Bake for about 6 to 8 minutes.

It's been COLD in North Florida. Tonight ( 2/2/21) it's going to be 30 during the night and tomorrow night 28. The Baptist church opens their doors to the homeless so they have a warm place to sleep. They also give them something to eat. My neighbor is a member of the church and I asked if I could contribute some cookies. This recipe was just waiting for me to make it!

  1. Yum, these look so good. If I lived near you, I would be stealing cookies from your kitchen. I have to cut back on my sweets, I think my sugar number went up a notch or 2.....but I love seeing your pictures and drooling.
