Ingredients:
1 cup lentils ( dried, picked over and washed)
1/2 cup yellow onion -roughly chopped
1 pound cabbage - chopped in food processor
1 inch knob of ginger
1/2 tsp. dried turmeric
3 cloves garlic
1 small jalapeno- washed and if you want less heat remove seeds
4 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
2 bays leaves
6 1/2 cups water
8 ounce can tomato sauce
1 tablespoon olive oil
Hot sauce to taste
Directions:
Add garlic, onion, ginger, jalapeno to a food processor and blend until smooth. Add dried turmeric and pulse another minute.
Set IP on sauté and add oil. Add onion mixture and sauté for 3 to 4 minutes until slightly brown.
Add lentils, bay leaf, cabbage, tomato sauce to the IP with the onion mixture. Add the 6 1/2 cups water.
Close the lid and set IP on high pressure for 12 minutes. When time is up do a natural release.
Once pressure is released open lid and add red wine vinegar and hot sauce to taste.
Hmmm. this one sounds good too. I used to make a cabbage soup with a can of tomato juice. It was really good. Will have to see if I can dig it up. I don't have an IP, so I would have to do things the long way for this recipe. Sounds like it has all the ingredients I like, so will get the items I need. Seems like it has some spice, and you know I love that. YUM.
