I still have blueberries in the freezer from my wonderful mornings picking with Mey.
INGREDIENTS:
1 cup quick cooking oats
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
4 eggs
1/3 cup honey
1 tablespoon brown sugar
1 cup mixed berries if frozen, thawed and smashed a bit
Directions:
Mix oatmeal, flour, baking powder, cinnamon and salt in a small bow. Set aside.
In a larger mixing bowl, add eggs, honey and brown sugar and mix well. Add dry ingredients and mix well. Fold in berries.
Grease molds with nonstick cooking spray and use a 3 tablespoon portion scoop to fill each cup.
Place 1 cup water and trivet into instant pot.
Place the lid on the pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 8 minutes. When cooking cycle is complete, let pressure naturally release for 10 minutes before opening pot.
I really liked these. They aren't overly sweet.
Wow, this sounds like something my daughter in law would love. I don't have an instant pot, but she does. Going to pass it on to her.
