Texas Size Cinnamon Applesauce Muffins
Ingredients:
1 1/4 cup applesauce
3/4 cup sugar
1/2 cup vegetable oil
2 eggs
3 tbsp milk
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp Saigon cinnamon
1/2 tsp nutmeg
1/2 tsp pumpkin pie spice
1/4 tsp salt
1/2 cup chopped pecan ( optional)
Directions:
Preheat oven to 350 degrees. Line muffin pan with Texas size muffin liners.
In a medium bowl, combine the applesauce, sugar, vegetable oil, eggs, and milk.
Slowly add in the flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice, and salt.
Add pecans and stir until just combined.
Pour batter into muffin liners.
Bake for 45 minutes or until large wooden skewer comes out clean.

This is a keeper for me. Anything with pumpkin pie spice is a good one. I will be making these soon.
ReplyDeleteMarie and Ted gave me a two bags of pecans. I saw this recipe ( which was for a bread) and you know how much I love a BIG muffin!
