Jack Jack’s Chocolate Chip Num Num Cookies Recipe

Ingredients:

1 cup butter (2 sticks), softened
1¼ packed cups brown sugar
¼ cup granulated sugar
1 teaspoon sea salt
1 large egg
1 large egg yolk
1 teaspoon pure vanilla extract
2¼ all-purpose cups flour
1 teaspoon baking soda
1 cup chocolate chips

Directions:

1. Line a baking sheet with parchment paper. Melt the butter in a small skillet over medium heat. Cook, swirling occasionally, until the butter has browned and started to foam, about 5 minutes. Remove from the heat and transfer to a medium bowl to cool until it begins to solidify.

2. When the butter is solid, add the brown sugar, granulated sugar and salt. Using a hand mixer, cream the mixture until light and fluffy, about 5 minutes. Add the egg, egg yolk and vanilla, and mix to combine.

3. In a separate bowl, combine the flour and baking soda and whisk to combine. Add the dry ingredients into the wet ingredients and mix until just combined. Add the chocolate chips and stir to combine.

4. Using a cookie scoop, scoop the dough into balls onto the prepared baking sheet, and transfer to the fridge to chill, at least 1 hour, it can be left overnight.

5. When the cookies have chilled, preheat the oven to 350°F. Bake the cookies until the edges are golden brown but the centers are still soft, 7 to 10 minutes.

In the film The Incredible s 2,when Jack Jack (a baby with superpowers) gets angry, cookies are the remedy to calm him down. Maybe these cookies will calm you during this difficult time.

BTW- Cookie baking is my culinary therapy.  This is want is said about culinary therapy “the therapeutic technique which uses culinary arts, cooking, gastronomy, and an individual's personal, cultural, and familial relationship with food to address the emotional and psychological problems faced by individuals, families, and groups.”

In other words, “it’s the idea that cooking and baking can provide the lessons and life skills that can help a person,” adds Ohana. “It involves problem solving, time management, communication, teamwork, and my personal favorite, mindfulness. All of these things can help a person become more grounded, happier, less anxious, and so much more.” When practiced frequently and in combination with mindful eating, culinary therapy can also offer individuals a sense of accomplishment and improved self-esteem.

I'm not a huge chocolate chip cookies fan, I do like THIS one but I have to admit Jack Jacks is pretty darn good.

These are going to Mey's hubby and Ae-yuns daughter.

I can't imagine opening the oven this week. It is awful here. My house would be baking the cookies. Stay safe and keep on baking !!!!
