Copycat Levain Bakery Chocolate Chip Cookies




INGREDIENTS:


1 cup of salted butter (2 sticks), cold
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 1/2 cups all-purpose flour
1 1/2 cups cake flour*
3/4 tsp baking soda
1 tsp cornstarch
1 tsp salt
1 1/2 cups chocolate chips


DIRECTIONS:

Preheat oven to 410 degrees Fahrenheit.

Cream the butter and sugars together until light and fluffy. Since you are dealing with cold butter, start on low speed for about 30 seconds. Switch to medium speed for another 30 seconds and then high speed for 1 minute.
Beat in the eggs, one at a time.

In a separate bowl, combine the flour, baking soda, cornstarch, and salt.

Add the dry ingredients to the wet ingredients and mix until combined.

Fold in chocolate chips.

Drop cookie dough, using approximately two tablespoons of dough for each cookie, onto your baking sheet. Feel free to use less or more for smaller or larger cookies.

Bake for 12-13 minutes, or until the edges of the cookie are golden brown. The tops of the cookies should be a light brown and the dough should look cooked, but the cookies should not be fully set. Let cookies cool at least 15 minutes. This gives them a chance to set so that you can remove the cookies without them breaking and will also allow inside of the dough to cook a little more. Make sure you don't move the cookies before they are set. They should still be gooey inside even after you wait 15 minutes. Cookies are best eaten warm. The exterior of the cookie will brown quickly, leaving the interior soft and doughy, so keep a close eye on them

 Smaller cookies will bake faster.

Cool on the baking sheet and enjoy!

*What Two Ingredients Do You Need to Make Cake Flour? You only need two ingredients that you probably keep on hand: cornstarch and all-purpose flour. For every cup of cake flour called for in a recipe, measure one cup of all-purpose flour, remove 2 tablespoons of the flour and then add the flour to a mixing bowl.

Made for valentines day for Cassie and her family and Laura and Jerry.

I also took a bag to give to the girls when we got our covid shot on the 11th.

  1. These look so Yummy. You make the best looking cookies. I bet the girls from your COVID shots loved and appreciated them. And also Cassie's family and Laura and Jerry must have feasted on them. Good thing I don't live close, I would weigh a ton. You are a special lady to make cookies for all these people.
