Thai Tuna Salad
Ingredients:
4 cups chopped romaine or iceberg lettuce
2 cups bean sprouts
1 1/2 cups chopped fresh snap peas
1 cup sliced mushrooms
2 tablespoon chopped cilantro
1 4 ounce can tuna packed in water - drained and flaked
Dressing:
1 tablespoon plain rice vinegar
2 teaspoons creamy peanut butter
1 teaspoon low sodium soy sauce
1 teaspoon sriracha sauce
1 teaspoon sugar
Directions:
Place all salad ingredients in a large bowl
In a medium bowl combine the dressing ingredients
Add 1 tablespoon water and whisk until dressing combined and sugar has dissolved
I like my dressing on the side but you can drizzle over salad

DeleteI agree with Kathy, this looks so good. I must get back to my salads. Not being able to do much with one hand, has me eating, not so healthy. Hopefully next week will improve.
