Ecstasy Bars






About 15 years ago I got this recipe from "The Coffee House Cookbook," courtesy of  Davis Magazine. TOH Peanut Butter Bar recipe made me think of it.It has virtually the same ingredients except a slight variation in amounts. Sprinkle the chips on when it comes out of oven, and marbleize the chocolate chips and glaze together.


Ingredients:
1 cup flour
1 cup rolled oats
1/2 teaspoon baking soda
Pinch salt
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup peanut butter, divided use
1 1/4 cups chocolate chips
1/2 cup powdered sugar
3 tablespoons evaporated milk


Directions:
Turn oven on to 350 degrees

 Grease a 9- by 13-inch pan and set aside.

Combine the flour, oats, baking soda and salt in a small bowl.

In a medium bowl, cream butter, sugar, and brown sugar until smooth.

Add egg, vanilla, 1/2 cup peanut butter ( save 1/4 cup for later) and mix thoroughly.

Fold dry ingredients into wet mixture. Mix until just combined.

Spread dough into prepared pan.

Bake for 20 minutes, should be lightly golden brown.

Remove pan from oven and immediately sprinkle the chocolate chips on top of the crust. Wait a few minutes then spread chips across the dough as they melt.

While chocolate is melting, in a separate bowl combine powdered sugar, rest of the peanut butter and milk. Mix will and spread onto the melted chocolate- should form a marbled pattern.

Allow the bars to cool.

Makes about 24 bars

  2. This sounds yum. I gained 10 pounds just reading the recipe. Kathy I bet they would be great with butterscotch chips.

    1. Thank you, Myra. I'm allergic to chocolate so that's why I was thinking butterscotch. I'm trying to lose weight, but seeing a recipe like this one makes me want to fire up the oven & start baking!! YUM!!! Thank you, Linda, for sharing your gorgeous treats!!!

    2. You can always freeze them. Cut into the size you want to eat and wrap. Take it out about an hour before you want a treat.
