Malva Pudding ( South American Marvel)


Live Oak recipe exchange day! Today's theme was international food. I made Pickled Korean Radish, which I was surprised that a few people actually enjoyed  and plan to make.

Christina searched pinterest and found this yummy dessert which I wanted to share.

Ingredients:

FOR THE PUDDING:
1  cup light brown sugar
1  egg
1  tablespoon unsalted butter
3  tablespoon smooth apricot jam
1  cup plus 3 tablespoons cake flour
3  teaspoon baking soda
1  cup milk
1  teaspoon apple cider vinegar
2  teaspoons pure vanilla extract


FOR THE SAUCE:
1  cup heavy cream
3  tablespoons unsalted butter
¾  cup sugar
1/2 teaspoon vanilla



Directions:

Preheat oven to 350 degrees. Butter a shallow 6-cup baking dish.
Beat the sugar, egg, butter and jam together until pale and fluffy.
Slowly beat in the flour, baking soda, milk, vinegar and vanilla until completely blended.
Pour into the baking dish, and bake for 45 minutes, last 15 covered with foil to avoid further browning-*

Combine the sauce ingredients in a saucepan, and heat only long enough to melt the butter.
Pour the sauce over the pudding as it comes out of the oven, and allow it to be absorbed. Serve the pudding warm with softly whipped cream.

* use a toothpick to check if done. Insert toothpick in the center and it should come out clean.

  1. What a pleasant looking Lady. Her smile is contagious. I would love to try the pudding. I hope it doesn't send my sugar up. I've gotten close to the 86 year old Lady two doors down from me. I will share with her.

    2. It has a very buttery flavor. Splurge away. I am making it with my niece this weekend, she wants to try it.
