Zucchini Hummus
Ingredients:
1 cup diced zucchini
1/3 cup tahini
2 to 3 tablespoons fresh lemon juice
1 to 2 cloves garlic , minced
1/2 teaspoon sea salt , or to taste
2 teaspoons ground cumin
Directions:
Combine all of the ingredients into your food processor. Blend until smooth and creamy, then add more lemon juice, garlic, and salt as desired .
Serve chilled with veggies.
Another great way to use your zucchini. I never heard of hummus without using chick beans. Will have to look up tahini.

DeleteI have never cared for hummus. I bought different flavors and they all went to waste. Ì like zucchini, maybe it would be worth trying.
ReplyDeleteDottie you need to try tahini first. It's made from sesame seeds. I love the taste but you may not.
