Thin Mint Smoothie







Mint is a questionable addition to any garden. It's extremely invasive and most people really don't know what to do with it except use it as a garnish in drinks.

I've made mint jelly many years ago and it came out great. I added it to cut up watermelon and also add a few leaves to a glass of ice water. This recipe is so good I know I'll be using lots of mint!

It's from Popsugar - something perfect for a hot summer day.

Ingredients:

3/4 cup nonfat plain Greek yogurt
1/4 cup fresh mint,  washed and dried-tightly packed
1 cup almond milk
1/4 cup Andes Cream De Menthe Chips OR dark chocolate chips
1 cup baby spinach
1 tablespoon honey
2 cups ice

Directions:

Combine all ingredients into a blender and blend until smooth.

Garnish with mint and a few chips.

    1. Myra, Myra, Myra- you know me. I hate wasting anything. I have so much mint and I can't grow anything else around here.

      The mint isn't going to last long with this recipe.

  7. I started a mint plant in my garden and moved it after the first year-good thing I did or it would have spread like wild fire. It's doing its thing where it is now and doubled its size. This looks so pretty and refreshing. Believe it or not, I've only used mint as a garnish (it was BOB that wanted the plant for that reason and that reason only-he doesn't even like mint!) but I do like it....

  8. Mint is a container-only plant for me... Mine started getting so out of control, but luckily(?) the cats made a bed of it and smothered it to death. I'm starting more in baskets because I love having it for tea, but I've never used it in smoothies. I'm excited to give this recipe a try!

  11. Marilyn- I have TONS of mint, it's the only thing the deer won't eat in my yard.
    I saw another recipe today that had LOTS of mint that I'll be making soon. If it passes the Linda taste test and the photo comes out I'll be adding that soon.

    1. Have you made mint extract? It's easy. I can tell how I make it. You know what's good? Adding a tab to brownies, hot chocolate or ice cream!!!!

      I found another recipe that uses mint. Hope you follow me or come back. I'll make it but have to see if it passes the Linda test. If I like it I put it on the blog.

  20. So true - mint is mega invasive! And then it crossbreeds with whatever other mint species plant happens to be around and ends up tasting funky after a few years. In spite of all that, I really love mint so thank you for sharing this recipe. =) Visiting from The Pin Junkie!

    1. We live in the woods and don't have a fenced in yard and the mint "WAS" the only thing the deer didn't eat. I noticed this morning that the deer decided that I didn't need to make anymore smoothies- they ate almost all of the mint!
