Buttermilk Chocolate Chip Cookies

I had leftover buttermilk and found this recipe on Amanda's Cookin.

Ingredients:

3 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup butter flavored shortening
1 cup granulated sugar
1 cup packed light brown sugar
2 eggs
2 tsp vanilla extract
1/2 cup buttermilk
8 oz chopped semisweet chocolate

Directions:

Preheat oven to 350 degrees F

Line cookie sheets with  parchment paper and set aside.

In a large bowl- add the flour, baking soda, baking powder and the salt. Whisk it together so everything is combined.

Cream the shortening and the sugars in another large bowl . Put the mixer on medium speed and mix until light and fluffy, which should take a 3-4 minutes.

To the shortening and sugar mixture add one egg at a time. When you add the egg beat it in for about a minute before adding the other one.

Now you have to reduce the speed of the mixer to low, otherwise you are going to have flour flying all over your kitchen.

Add flour- buttermilk- flour- buttermilk- flour- buttermilk

Add the chocolate chips with a wooden spoon.

Use a cookie scoop ( my new favorite kitchen toy) and place the dough on the cookie sheet with the parchment paper.

Bake in 350 oven for 10-12 minutes or until golden brown.

Remove cookies from oven.

Let the cookies cool on the sheet a few minutes before removing and placing them on a cooling rack.

    1. Hi Val,

      Thanks for stopping by.

I hate wasting anything. I made a few things with the buttermilk and had some leftover and I just had to find something to use it in. Since I love cookies this recipe was perfect!

I don't post on many parties like I use to but never miss Country Fair Blog Party.

      Hugs,
      Linda
