Sun Dried Tomato- Red Pepper- No Bean Hummus
It won't be long now till we are on the road and headed back to New York. I made hummus a few months ago and still have half a can in the fridge. Not sure if tahini will keep and saw THIS recipe and decided to try it.
As usual I subbed ingredients- I used Slap Ya Mama instead of using the salt, cayenne pepper and paprika. I seasoned to taste.
Ingredients:
1 zucchini, peeled & chopped into 1 inch pieces ( I didn't peel the zucchini)
1 red bell pepper, chopped, seeded & cut into 1 inch pieces
2 garlic cloves
1/4 cup sun dried tomatoes
1/4 cup freshly squeezed lemon juice
1 tbsp extra virgin olive oil
1/2 cup tahini
1/2 tsp.sea salt ( didn't use)
1/8 tsp. cayenne pepper ( didn't use)
1/4 tsp. paprika ( didn't use)
Slap ya mama to taste
Directions:
Place all ingredients in a food processor or blender.
Blend until combined well.
Place in a bowl & serve with your favorite veggies or chips

I've never tried hummus before until I had my hand surgery a year and a half ago. I loved it. We had a farmers market at work & the guy made it with almonds. I want to try this one, I know it will be just as good. Nice swap out with the Slap Ya Mama.

ReplyDeleteLOL Corinne! I like zucchini skin and the only time I peel it off is if i get a huge zucchini from someone's garden and the skin is thick.

ReplyDeleteI tried Hummus once and liked it but for some reason never tried making it. Hey-this one has zucchini in it-it HAS TO BE GOOD! :) It looks like a nice healthy snack that I would enjoy.
I do NOT miss the snow but sure do miss my little house.
DeleteEvery time I see you use the "Slap You Mama", I have to laugh. Who would think a seasoning would be called this. I have never heard of hummus made without beans. Love the bean ones. I doubt I would try making it tho, since I am not a handy one in the kitchen and don't have any of the machines you need.......like a food processor. Cyndy, I would love the almond hummus....anything almond is for me. This recipe sounds so good tho, and I do have a whole jar of sun dried tomatoes in the cabinet. Maybe I will attempt it. It has all the ingredients I like, so it will be worth a try. Thanks LInda for another tasty recipe....

DeleteI have never found Humus in the stores. It sounds so good to. I know one little guy that will be happy to be back in NY. But I also know Leda is going to be lonely for you.

I wish you could take Leda back to LI with you. She is going to be lost without you. I will keep sending her notes and cards. I think Monica would like this....I am going to make some for her. Don't go back to LI til the weather is much better.
