Chocolate Marshmallow Cups
Carol is fantastic when it comes to finding recipes. This is an old one from the TOH board that was posted by Arlene.
Arlene said she saw the recipe while visiting her Mom and it looked easy. I'm here to to tell you it sure was and it is delicious.
I would love to make this again but would add some caramel extract to the ingredients.

Ingredients:
1 pkg mini marshmallows
1 c crunchy peanut butter
1 (12-oz) pkg chocolate chips
1 stick margarine
cupcake liners
Directions:
In a regular size cupcake pan add liners. This recipe said it makes 24 cups. I cut the recipe in half and made 6. You may get 24 cups depending on how much chocolate you add.
In a medium size saucepan melt the margarine, the peanut butter and the chocolate over low heat and stir often.
Put 8 mini marshmallows in the bottom of each liner and then spoon the chocolate on top of the marshmallows.
Put in the refrigerator until chocolate is hard.
Once they were "hard" I removed and placed in a covered tin.

Oh my gosh Linda, those look so good! I saw these and loved how easy they looked. You know me-I'm not a big candy maker....I need EASY when it comes to stuff like that. I can't wait to try these. I'm on the lookout for one of the new peanut butter flavors that I have in mind to try. The caramel extract sounds like a good idea...isn't that stuff great? I think I'm gonna use dark chocolate in mine...I'm hooked on the darned stuff.

DeleteOMG.......you have me drooling now. These look so good. Thank you to Linda and Carol for this yummy recipe. They look so easy, and you don't even have to bake them....I have never heard of caramel extract or dark Chocolate. Where do you girls find all these different extracts and all the strange ingredients you use in your cooking and baking. Maybe my stores have them, and I never noticed.....gonna check this for sure,.
ReplyDeleteHi Myra-Super Walmart has the caramel extract...Watkins makes it. They also have dark chocolate chips...Nestle's and Ghiradelli both have them.....my regular grocery store has dark chocolate chips too.

I will have to check out the Walmarts. I know Target sometimes has different ingredients also. I thought you were talking about a Chocolate extract. I always buy the dark chocolate chips, they are my favorite. Thanks for the info.
DeleteThere is such a thing as chocolate extract, Myra....Walmart USED TO carry it (also made by Watkins) but I think it's discontinued. Not sure if McCormick makes it but there are other companies on the Internet that do. If you google "Chocolate Extract" I bet some would pop up.
