Chief Justice William's Lemon Cake
I was contemplating making another lemon cake recipe. I finally decided to adapt this recipe from Ciao Italia.
Ingredients:
1 package Duncan Hines Signature Lemon Cake Mix
1 (3.4 oz.) package instant lemon pudding and pie filling
4 large eggs
1 cup water ( used 1/2 cup fresh lemon juice & 1/2 cup water)
⅓ cup vegetable oil
Directions:
Preheat oven to 350°F. Grease and flour 10-inch Bundt or tube pan, I used 2 medium size loaf pans. My loaf pans were the aluminium disposal ones - medium size. If they have larger ones I didn't see them at the Dollar Tree.
Combine cake mix, pudding mix, eggs, water,lemon juice and oil in large bowl.
Beat with an electric mixer at medium speed for 2 minutes. Pour into prepared pan.
Bake 50 minutes or until toothpick inserted in center comes out clean.
Cool cake on wire rack for 25 minutes. Remove cake from pan and cool completely.
Dust with sifted confectioner’s sugar or add the glaze
I used the recipe from 1-4 Details for the homemade vanilla glaze.

I LOVE Mary Ann Esposito! I used to watch her all the time on PBS with my Mom...she loved watching her show. I just saw her making cream puffs-boy did they look good. And so does that lemon cake, Linda. I adore lemon in everything. Wish I could snitch a slice of that right now......it would go nicely with my morning coffee. :)

DeleteNow this is something I would love. It sounds so easy to make, and will be made when I get the ingredients I need. I saw a lemon loaf recipe on Facebook yesterday. It was supposed to be the Starbucks lemon loaf. I was debating on trying that one, but I think I will try this one first. I can slice it down and freeze it in slices for one at a time eatings. DeleteOh my goodness. I used to get Lemon Poppy Seed Muffins. I love Lemon Cakes. But sadly I can't have them anymore. Unless everything is sugar free. Maybe I can grab a fork and snitch a little bite of what is on the plate.

DeleteSince we do not always have lemona/lemon juice on hand I subsituted the lemon juice/water. I used a few packs of TruLemon mixed in with the water. Still delicious!
ReplyDeleteFor those that do not know what TruLemon is - it is crystailized lemon juice. I keep that as well as the TruOrange and TruLime on hand as easier for me to store.
Perfect sub! I would of done the same thing. My neighbor gave me a bag of lemons from her tree so there will be other lemon recipes coming soon.

Such a pretty cake. The glaze looks fantastic. Lemon desserts always remind me of my great-grandmother. They were always her favorite!
