Cauliflower Hash {Paleo}
KC's Produce recently had a sale on cauliflower, I could not resist. I picked up FOUR heads. They were a dollar each! I love cauliflower so you will be seeing lots of cauliflower recipes.
I saw this recipe on An Edible Mosaic quite awhile ago. It sounded good. I'm not on a paleo diet but I thought it was a good one to share for those on that diet.
As usual I changed the recipe a tiny bit. When it was completely cooked and after I plated it I sprinkled it with Slap Ya Mama. Delicious.
Ingredients:
2 tablespoons olive oil
3/4 pound cauliflower- chopped into small pieces
1 medium onion- diced
1/4 teaspoon smoked paprika
1/4 teaspoon salt (didn't use)
1/8 teaspoon black pepper
3 tablespoon water
1 large clove garlic- minced
2 teaspoons lemon juice
2 teaspoons minced fresh parsley- for garnish
Fried egg- for serving ( optional) ( didn't add this time- I'm going to make this again and add the egg)
I seasoned with Slap Ya Mama
Directions:
In a large skillet heat the olive oil over medium heat.
Add the onion and the cauliflower to the skillet and place them in an even layer.
Cook without stirring until it start to brown on the bottom. That should take about 2-3 minutes.
Give the vegetables a stir and add the smoked paprika, salt, pepper and water.
Cover the skillet and cook the cauliflower until it is fork tender, about 3-5 minutes.
Add the garlic and reduce the heat- cook for about 2 minutes and continue to stir.
Stir in the lemon juice and continue to cook until the lemon juice is evaporated.
Sprinkle with parsley and add the egg if desired.

That looks good, Linda....I love cauliflower too. I bet it would be super with the egg on it. That would be dinner for me!

Love cauliflower and have been trying to eat more of it. This recipe would do the trick though I am not familiar With Slap Yo Mama. Will have to Google that one! :-)
