Amish White Bread


Awhile back I made Split Pea soup for dinner. I forgot to pick up rolls and I had plenty of flour so I decided to try to make some bread.

With Carol's help I've made pizza dough, which is a favorite, but Gabe is the bread man and I decided to give this recipe a try. He loved it!

This recipe is from Allrecipes. I love reading the reviews on that site. So many good tips.

Ingredients:

2 cups warm water ( 110-115 degrees)

2/3 cups sugar ( I cut the sugar down to 1/4 cup)

1 1/2 tablespoon active dry yeast ( I used rapid rise yeast)

1 1/2 teaspoon salt

1/4 cup vegetable oil

6 cups bread flour

Directions:

1- Dissolve sugar in warm water in a large bowl. Stir the yeast. Allow to proof ( it will resemble creamy foam)

2- Mix the salt and oil into the yeast. Mix in flour one cup at a time.  I did this in my KA mixer with the dough hook. Mixed one cup at a time with the dough hook on low speed for 2 minutes. Once all the dry ingredients are combined increase the speed to medium for 5 minutes. Take the dough hook off and remove the dough and knead  by hand and form into a ball. Oil the bowl and take the ball of dough and replace it in the bowl and turn the dough to make sure the whole ball has oil on it. Cover the bowl with plastic wrap and let it set in a warm area. It should take an hour to rise.

3- Check out the dough to make sure it doubled in size and then punch the dough down. Knead for a few minutes and divide in half. Shape into loaves and place in two greased 9 x 5 loaf pans. Allow the dough to rise 1 inch above the pan.

4- Bake at 350 degrees for 30 minutes or until the bread sounds hollow when you tap it on the bottom. Take it out of the pans right away and place on a wire rack to cool. Make sure it's cool before you wrap it in foil or plastic wrap.

    I love this recipe too. To make an even softer crumb, substitute 1 cup of milk for the water-it's so good. My Mom and my Nana taught me that trick-milk added to bread makes it softer. I've made this recipe both ways and enjoyed it each time. Adding the higher amount of sugar to the recipe makes a great sweet roll dough for cinnamon rolls too.

    Shhhhhh Carol..............cinnamon rolls are evil things in this house.

    Pizza dough-good grief I've made it so much (every Friday night) that I don't even need the recipe in front of me any more. Homemade pizza rocks! :)

  2. Oh My goodness, that bread looks so good. Even in my cooking days, I never would have attempted to make bread. Both you and Carol are such wonderful cooks and bakers. I know that Janie cooks also, and I am in awe of you. My mother in law used to make her own pizza dough. Friday nights were pizza nights at her house also. She used to make a white pizza, which I didn't eat because I don't like anchovies, but my husband loved it, so I learned how to make it also. I love pizza, but only the kind I like, I am not one to try alot of different things. Oh Carol, Cinnamon rolls would be evil here also. It is my weakness.

    Now I am hungry, so I must find something to eat.

    1. Oh you ladies brought back so many good memories of making bread. I used to make it by the loaves and also made sure there were stickie buns to go with it. Gosh did the house smell good. It was so much fun for me to make it. This Amish bread reminds me of the Friendship Bread that Mom and I shared and I forgot how many of the family did this that year. Gosh was that bread great. I just might try this Linda. I am sure a slice or two isn't going to hurt. Maybe I can use splenda in this. I might even try the other pea soup that you posted. Not the Green but the other. Richard never had that one. He loved the Green Pea Soup with just the Ham..I know he wouldn't want me to give up on our Love for Pea soup..Thanks Linda for another great Recipe. Hugs

  3. I love making bread and this one is a keeper. The aroma that wafts through the the air while it's in the oven is just heavenly. Your photo makes me want to snatch a piece and slather butter all over it. now I'm craving bread.....

    1. Jillian- I can't tell you how yeast phobic I was. I can cook and bake almost anything but breads and rolls- This recipe is so easy and I never worry about how it's gonna come out.
