Jo-Ann has a wonderful blog- jo-ann-growingingrace.com. I saw this recipe and I adapted it to what I had left in the house. Jo-Ann has step by step instructions with photos for this recipe.
ingredients:
1 can ( 16 oz) re-fried bean ( used low fat)
3 cups mashed potatoes
3/4 cup flour
2 eggs- beaten
3 teaspoons taco seasoning ( used 1 tablespoon Slap Ya Mama)
1 can green chilies-drained ( didn't use )
1 1/2 cups cheddar cheese (used a Mexican Blend)
directions:
Add the mash potatoes, re-fried beans and flour to a medium size bowl. With an electric mixer, mix until smooth.
Add the two beaten eggs to the above mixture.
When the eggs are well combined add the taco seasoning , can of drained chilies and the cheese and mix all ingredients until well combined.
In a large skillet add 2 tablespoons of olive oil. Place about a tablespoon of the mixture in the skillet and fry until brown on both sides.
Serve with additional cheese or salsa.
Oh MAN do those look good. Bob will only eat mashed potatoes when they're doctored up........or made into pancakes. I know we're gonna love these.

Yum, this sounds good, Linda. I love refried beans, tho ya know what they do. Carol, I don't like plain mashed potatoes either. I mash them, and then add cheese of some kind, and some seasoning, and then put them in a ovensafe pan, I use a pie plate, and dot butter on top, and bake...the top gets real crispy, and my kids used to fight over who would get the crust.....
