Connie's Zucchini "Crab" Cakes

No idea who Connie is but sure enjoyed these crab cakes!

The recipe is from Allrecipes. I love reading the comments and usually find a tip or two.

I don't have a garden but was able to pick up zucchini for 99 cents a pound. Can't wait to plant a garden, I'll make sure to plant plenty! Love my zucchini recipes. 

2 1/2 cups grated zucchini ( used the Cuisinart & pulsed a few times)
1 egg, beaten
2 tablespoon butter, melted
1 cup bread crumbs ( used panko)
1/4 cup minced onion
1 teaspoon Old Bay Seasoning TM ( Trademark)
1/4 cup flour ( didn't use)
1/2 cup vegetable oil for frying ( used olive oil )

Washed and dried the zucchini and cut in large chunks and added to Cuisinart. Pulsed a few times till it was the consistency I wanted.

Removed the zucchini from the cuisinart and added to another bowl with the melted butter, panko, onion, egg which was beaten and the Old Bay Seasoning. Mixed well.

Shaped into patties but didn't use the flour.

Fried in the olive oil until golden brown on each side.

  1. Now these are my kind of crab cakes........because they don't have crab in them-not a huge fan of it. They look REALLY good Linda.

    I wish I could say my zucchini is busting out all over......not one squash on the plants. :( The store hasn't come down in price on it either. Depressing is what it is.

    Saving this one-hopefully the garden will wake up and do something productive soon............

  2. Sad that this weather is holding back the veggies. These "crabcakes" look really yummy...gonna have to share this one. Linda, I don't know how you do it, how can you stand to cook in this heat?? I couldn't stand the thought of turning on an oven or stove. The microwave is my bud.

  3. Carol, if Best Yet didn't have zucchini on sale believe me I wouldn't buy them. The grocery stores close to me want 1.69 a pound and I got them for 99/lb. Rita usually gives me zucchini from her garden and nothing is growing.

    Myra- It's not bad to fry them up. I have a fan that travels from room to room to cool us off.The jalapeno relish is great on them. I'm on my last jar and when it cools down I have to make more.
