Oh SO Good Potatoes!

My Divingabe  LOVES potatoes, 50 pound bag from the farmer to our basement where they stay cool. I don't know what Gabe is going to do when we move to Florida! No basement :-(

A week before we left Florida Hitchcock's had potatoes on sale- 10 pounds for 2.99. I thought about it and wondered if I could sneak them in the truck for the ride home. Well, I really thought I was going to get one of those " we don't HAVE potatoes at home" speeches but you know there's always room for his favorite.


The recipe came from one of my local community cookbooks. Elizabeth Doll was the poster and was known as a excellent cook.



2 pounds potatoes, peeled and diced
     1/2 cup onion, chopped
2 cups Velveeta cheese, cut into small cubes
   1/2 teaspoon pepper
1 can (10.5-ounce) cream of chicken soup( used low salt soup)
      1/2 cup butter, melted
1 pint sour cream
1 teaspoon salt( used 1/4 tsp.)
2 cups corn flakes, crushed
1/4 cup butter, melted
 
 
 
  1. Cook the potatoes until almost soft. Drain.
  2. Preheat oven to 350 degrees F.
  3. Mix together the onion, Velveeta cheese, 1/2 teaspoon pepper, cream of chicken soup, ½ cup butter, sour cream and salt 
  4. Add to the potatoes and pour mixture into a buttered baking dish.
  5. Mix together the corn flakes, 1/4 teaspoon of pepper, 1/4 cup of melted butter and cover the mixture.
  6. Bake uncovered at 350 degrees F for 45 minutes.

  1. I've made something similar before but I LOVE the fact that yours are made with real potatoes, not frozen hash browns. I just don't care for the texture of those.

    Can I have a serving of your potatoes for breakfast? I bet Gabe would say I can! :)

    Ms. Doll was a wonderful lady. She never forgot anyone's birthday. You always got a cake and she made sure it was something that you loved! You know how I hate coconut, one year someone told me she was making me a coconut cake. I was like ok, she's so nice and I don't want to hurt her feelings so I'll take a taste and thank her and give her a big hug.

    When I saw the cake it wasn't coconut! She knew I couldn't stand the taste and was thrilled she put one over on me.

    Today she would of been 102 years old.

      Ms. Doll sounds like a peach-and what a sense of humor too-letting you think you were getting a coconut cake for your birthday. I bet she was as proud as punch that she pulled that one off. What kind of cake did you end up getting anyway?

      I bet a lot of people miss her, especially when their birthdays come 'round.

      That's what I LOVE LOVE LOVE about hometown community cookbooks-you know the people that submit the recipes and you remember stories about them each time you read the book or cook a recipe from it.

      Happy Birthday Ms. Doll...........I'm sure she's smiling down from her kitchen in heaven.
