Christmas Thyme at Oak Hill Farms (Indiana) Cookies

Another cookbook from the library.  I wanted to make cookies for Jake before his family takes off for the summer. I should make Luna something but she prefers  pigs ears, and I bought her a nice big one. Wonder if she will miss Max.

I was concerned about the amount of oil in this recipe. I cut it to 1/2 cup oil and 1/2 cup water.


1 cup butter, softened
1 cup sugar
1 cup light brown sugar, firmly packed
1 egg, slightly beaten
1 cup salad oil (Wesson,Puritan -see my note above)
1 cup quick rolled oats
1 cup crushed cornflakes( measure after crushing)
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1/2 cup coconut- didn't use
1 cup pecans, chopped fine--didn't use
Red or green glazed cherries for decorations- didn't use


Cream butter and sugars

Add egg and the oil and mix well

Add oats, cornflakes,flour,soda,salt, and vanilla, mix well

Stir in the coconut and nuts.

Roll into 1 inch balls of dough and place on a greased cookie sheet

Flatten the balls with a fork in a crisscross pattern.

Dip fork in water between cookies

If you want to add the cherry half, place it in the center of the cookie

Bake at 350 degrees for about 10 mins or until light brown.

Do not overbake

Makes 8-10 dozen cookies

Since I didn't add the coconut and pecans the batter was thin. I put the dough in the fridge for about an hour. The cookies didn't spread out and when I took them out of the oven I let them sit on the cookie sheet for a few minutes. Easier to take off.

  1. Mornin J/j. What a great looking cookie. Corn flakes is an interesting ingredient. One can really do a lot with that cereal. Bet it adds a nice crunch to the cookie. Just the right size. I know Jake is going to enjoy them. Thanks for sharing the Recipe and that great photo. Bet Luna will get a taste as well.

  2. This brought back a memory. I remember making a cookie with cornflakes in them. These sound so good. Luna most certainly will miss Max.

  3. Ha! I have this cookbook-got it from the Quail Ridge Press bargain bin-they said it was a second but I can't find a thing wrong with it...anyway I agree-that sure does look like a lot of oil along with 1 cup of butter.

    I make a cornflake coconut cookie that I just love-but I know you're not a coconut fan. The corn flakes give the cookies such a nice crunch, no nuts are needed. I bet you could substitute something else in the recipe because the one I have uses only 1/2 cup coconut too. Maybe chocolate chips?

    So overall-what did you think of the final outcome? Thumbs up or down? I can then dog ear or UN-dog ear the page in my cookbook with the recipe.

    Poor Max-he's gonna miss his buddy Luna....they'll be back before you leave, right? I hope the dog that comes with the family that's renting is a friendly one so Max has a playmate.

  4. Janie- I guess Jake liked them. He came over asking for more today!

    Carol- yes, I added peanut butter chips. You know I don't allow coconut in the house. The kids liked them and they aren't super sweet. Give them a try and they might be good enough to be added to your Christmas tray.
