Ingredients:
2 minced garlic cloves
¼ cup chopped onions
2 Tbsp apple cider vinegar or lemon juice
3 Tbsp olive oil
1 Tbsp minced chives
1 Tbsp chopped parsley
½ tsp salt
½ tsp black pepper
1 lb halved cherry tomatoes
Directions:
Combine garlic, onion, vinegar, olive oil, herbs, salt, and pepper in a mixing bowl.
Toss in cherry tomatoes and stir until coated.
Cover and refrigerate for at least 30 minutes.
Serve as an appetizer, salad topping, or side dish.
I mixed in some goat cheese and it was a delicious lunch
