Ingredients:
½ Cup celery, diced
½ Cup bell pepper , diced
¼ Cup green onions, sliced
15.5 oz. white beans, drained, rinsed, and smashed
1 egg
½ Cup parmesan cheese, grated
¼ Cup oats
1 Cup sweet potatoes, shredded ( you can use the orange sweet potatoes)
¼ Cup all-purpose flour
½ Cup Panko
Directions:
Mix together all ingredients except for the panko in a mixing bowl until well combined
Form 12 burgers from the mix and gently coat in the panko
Bake or pan fry the burgers until they’re golden brown on both sides. Serve immediately
I had a few Korean Sweet Potatoes Ae-Yun gave me at Easter. I didn't cook them because we were going to Laurie's.
Korean Sweet Potato flesh is white. These look green due to the onion tops, celery and green pepper.
These look so good. I will look for Korean sweet potatoes. I doubt they will have them in my stores tho. I think I am back on track with my name being on here now. After 10 days of being away from my computer, I think it is ok now.
ReplyDeleteYes!! Your name is now back :-). You don't need to use the Korean sweet potato- the recipe used the regular ones but I got so many from Ae-Yun that I needed to use them up.I really liked them and will be making then again.
DeleteThese look fabulous - what a great food to bring to Fiesta Friday. I will try these subbing the egg for a flax egg to make them vegan (& use vegan cheese).
