Ingredients:
2/3 cups rolled oats
1 to 3 tablespoons unsweetened cocoa powder ( to taste)
3/4 teaspoon baking powder
2 tablespoons sugar
salt
1/4 cup milk ( any kind)
1 large egg
Chocolate chips
Directions:
Preheat oven to 375
In a blender, blend the oats and cocoa powder until it's a powder.
In a medium bowl whisk together the oat/cocoa mixture, baking powder, sugar and a pinch of salt.. Add the milk and egg. Whisk until smooth
The batter should be thick like cake batter. IF it's too thick add a tad more milk- one tablespoon at a time until you get the right consistency.
Pour the mixture into a 4 x 7 dish baking dish
Sprinkle with the chocolate chips.
Bake until the oats have puffed up and are glossy on top and it looks like cake about 15 to 20 minutes
Cool for 5 minutes and serve warm.

DeleteI made this today. I didn't have a 4 x 7 pan, so I used a smaller one. I think I baked it a couple of minutes too long, but it was good. Will make it again, and not bake it as long.
