Another paper recipe that I didn't want to end up tossing. It's from a 2018 magazine- not sure which one.
Gabe and I were talking about how many people we know do not eat leftovers. As you might of noticed I love using leftovers to make something new. This recipe is a perfect example.
Ingredients:
1 pound russet potatoes
1 large carrot- peel and cut into small cubes
2 tsp. olive oil
1 small onion
3 garlic cloves, minced
8 ounces leftover ham- ( I used the food processor to chop it up)
2 ounces cheese- ( use any type of cheese you like)
1/2 tsp. black pepper
2 large eggs -beaten
1/3 cups bread crumbs ( or if you want to make this gluten free add oats which have been pureed in a food processor, you might want to add more or less bread crumbs according to taste)
Directions:
Prick potatoes all over with a fork. Microwave on high for 5 minutes.. Turn and cook until potatoes can be easily pierced with a fork all the way into the center. May take another 5 to 7 minutes. Carefully transfer to a cutting board and cool.
Bring a medium pot of water to a boil and add the carrots. Cook until tender and drain.
Scoop out potatoes and add to a medium sized bowl. Add the carrots and mash.
Heat oil in a medium sized skillet and cook onion and garlic until soft. Stir in the ham. Remove from heat and add to the potato mixture.
Stir in the cheese, eggs and bread crumbs to the potato mixture with the ham and add pepper
Form the ham mixture into "burgers".
Preheat oven to 450. Coat a large baking sheet with cooking spray. transfer logs to pan then give them another generous spritz with the cooking spray.
Bake at 450 until golden brown - about 25-30 minutes.
You are the queen of using up leftovers and everything else. I use leftovers, but not to the extent you do. Good idea downsizing your paper recipes. At one time I had a photo album that I put all my paper recipes in. I go through them every so often and get rid of the ones I probably will never make. This recipe for the "ham Burgers" sounds like a good one. Good luck with downsizing.
