Snickerdoodle Cookie Bars With Cinnamon Chips

 



Ingredients:

Snickerdoodle Cookie Dough

2 3/4 cups flour

2 teaspoons cream of tartar

1 teaspoon baking soda

1/2 teaspoon salt

2 sticks (1 cup) salted butter softened

1 1/2 cups sugar

2 large eggs

1 teaspoon vanilla

1 ( 10 ounce) package cinnamon chips 

2 tablespoons cinnamon sugar (2 tablespoons sugar + 1 1/2 teaspoons cinnamon)



Directions:

Preheat oven to 350 degrees F.  Grease 13 x 9 x 2-inch pan or spray with non-stick spray.  Fit pan with a parchment sling and spray that too.

Whisk together flour, cream of tartar, baking soda and salt in small bowl.

Cream together butter and sugar in large mixing bowl until fluffy and lighter in color. Mix for several minutes.  Add vanilla and eggs, one at a time, and mix until combined.

Gradually add in flour mixture.

Stir in the cinnamon chips.

Spread two-thirds of the cookie dough in prepared pan. I find it easiest to do this with a greased spatula or greased fingers as the dough is VERY sticky. Then sprinkle with cinnamon sugar. Add the rest of the dough in dollops on top of the cinnamon sugar

Bake for about 25-30 minutes or until set and slightly golden brown.

Cool about 10 minutes in pan on wire rack.



I love to bake but so many people I know are either on a diet or staying away from sugar. 

Baking ( especially making cookies) is a HUGE stress reliever for me. 

The kids whom work at Planet Fitness really like the stuff I make so this is for them.

Kenny is one of my favorite employee's and he's back on days. He usually works 10 pm to 6 am! It was so nice to see him again.

I also gave some to Abby who works at Beef O'Brady's ( we go there on wing Wednesday). I also saw our Fed Ex driver Jose and gave him a few bars.


I liked them but were a bit of a pain to make. The batter is very sticky so not sure if I would make them again.

    1. you know how much I love to bake but these were a royal pain to get in the pan. I didn't want anyone making them and then thinking why didn't she warn me! LOL

      They were good and happy everyone liked them but there are so many recipes just waiting to be made!

  2. Wow do these sound good.....but I would not attempt them since if they were a pain for you to make, I can't imagine how I would be freaking out. You are so wonderful to make all these things for so many people. You are a special lady.

    1. Thank you but I love to bake. Maybe in my next life I will have a large loving family to cook for.

      The kids who work at the gym are so nice to me. When they see me they always say Good morning Miss Linda- cute. One of the girls is pregnant and loves sweets. Told her I would making lots of goodies for her.
