Ingredients:
2 ounces olive oil
1 ounce balsamic vinegar
1/2 teaspoon salt
pinch of ground black pepper
1 tablespoon diced red onion
8 cups diced watermelon
2 cups fresh blueberries
1/4 cup rough chopped fresh mint leaves
1/2 cup goat cheese crumbles ( I subbed this for the Feta)
Directions:
In a large bowl, whisk together olive oil, balsamic vinegar, salt, pepper and diced red onion.
Add the diced watermelon, blueberries, mint and goat cheese to bowl. Gently toss to coat.
Last of the watermelon recipes for this year. This was a good one.
Never thought of using feta cheese with watermelon. Must be good. Sweet and salty. Love that combo. Will have to try this one out.
