Copycat Tate's Chocolate Chip Cookies

 



INGREDIENTS

2 c. all-purpose flour

1/2 tsp. baking soda

1/2 tsp. salt

2 sticks salted butter, room temperature

3/4 c. sugar

3/4 c. brown sugar

1 1/2 tsp. vanilla extract

2 Eggs, room temperature

1 bag semisweet chocolate chips (about 12 ounces)

coarse sea salt (for topping cookies)


Directions:


In a large mixing bowl, combine sugars and butter. Use an electric mixer to beat the two together, whipping them until the mixture is a pale yellow and has a creamy texture. Slowly beat in the eggs and vanilla extract.

Stir in the flour mixture, adding a little at a time until fully combined. Fold in the chocolate chips.

Form into 1-inch patties and place about 1-2 inches apart on a parchment-lined baking sheet. Sprinkle each with a little coarse sea salt.

Bake at 350 for 15-17 minutes, or until the cookies are a warm, golden brown and look crispy on the edges.


Note : Mey's neighbor gave me two cuttings of Plumeria. I have them in a pot and hope they will root. I thanked him and wanted to make him some cookies for giving me the cuttings and he said he wanted chocolate chip cookies.


As you know I love making cookies and have made MANY recipes on my blog. I have many chocolate chip recipes but one morning Gabe asked me if I saw on the web that Kathleen King, owner of Tares Bake Shop sold her business for over 500 million dollars. This got me thinking I really should make her recipe for her "famous" chocolate chip cookies.

We knew Kathleen, I met her at the gym and I went to school with her brother Richie, He father ( Tate) was a farmer, her mother a nurse at our local hospital. Kathleen  started baking at 11, selling her cookies at her family's farm stand, North Sea Farms, to pay for her school clothes . Her first bakery was in a building where a friend of Gabe's originally opened a bakery. It was named  Kathleen's Bakery and had accumulated $600,000 in debt, and eventually had to shut down. This didn't stop her, she opened the bakery maybe a year later under the name of Tate's ( for her father).

So, this recipe was made cause I was gifted the Plumeria and Gabe mentioning how much Kathleen got for the bakery.

  1. Linda, these cookies look so good. I enjoyed reading your story about the bakery. Funny how we end up making cookies for reasons we never expected. I checked out the Plumeria and they are really pretty. I hope they bloom for you.
