Copycat Panera Broccoli Cheese Soup

 




Ingredients:

3 medium broccoli crowns, chopped

1 small white onion, diced

1 cup matchstick carrots

2 cups half and half

4 cups chicken broth

5 tbsp. butter, divided use

¼ cup flour

¼ tsp ground nutmeg

8-oz shredded sharp cheddar cheese

salt and pepper

shredded marbled cheddar, for serving


Directions:

In a large stockpot over medium heat sauté onions in 1 tbsp. butter until soft.


Remove.


Melt remaining butter.


Whisk flour into butter and cook about 5 minutes.


Slowly add 2 cups broth and half and half.


Stir well.


Bring to a boil.


Reduce heat and simmer about 15 minutes.


Add onions, broccoli, carrots and remaining chicken stock.


Stir.


Simmer for 15-20 minutes, until veggies are tender crisp.*


Add nutmeg, salt, pepper and shredded sharp cheddar.


Stir until cheese is melted and serve.


Serve with marbled cheddar and crusty bread, if desired


Note: * I used the immersion blender after it simmered.

  1. Hey......this sounds like something Monica would love. She orders this soup when she goes to Panera. I will have to make it for her. You know, when I use the immersion blender, I end up splattering it all over. What am I doing wrong.

  2. Here are some things I did- I used frozen broccoli. Got a large bag at Walmart and steamed it up. I didn't do the matchstick carrots. I put a few carrots in the food processor to chop them up.

    LOL- the immersion blender. Gabe HATES messes on the stove. He gets super upset when I splatter on the stove top. I make sure the blender is on the bottom on the pot. Use a large pot also. All this has helped me. You know if you need any help just text me Ok?

  3. Thanks for letting me know I can use frozen broccoli. I am not great at chopping veggies, so this would be much better. I use the immersion blender sometimes, but I found when I make the tomato bisque soup, it is easier to put them in the blender and blend them before putting them in the pot. Less of splatter that way. Going to try this soup for Monica.
