Ingredients:
1 cup fresh Meyer Lemon juice
3 tablespoons honey ( use local honey from your area)
1 tablespoon grated ginger
3 pouchs gelatin ( 1 pouch is about 2 1/2 teaspoons unflavored gelatin. If a recipe calls for 1 tablespoon, use 1 pouch of unflavored gelatin.)
Directions:
Add 3/4 cup lemon juice to a small bowl. Add the honey and ginger to the lemon juice and stir until combined. SLOWLY sprinkle gelatin over the juice mixture.
Wait one minute till it dissolves.
Gradually add boiling juice( 1/4 cup). Stir constantly until gelatin is completely dissolved - about 1-2 minutes depending on the amount and temperature of the liquid
If there are still clumps of gelatin, stir to make sure they dissolve.
Pour into molds and refrigerate 2 to 3 hours until gelatin is set.
So many lemons from my tree this year. Think I had over 300 lemons. Gave LOTS away.
The photo above I added more ginger then was in the recipe, thus it looks very light. I made additional gummies and added less ginger and they came out nice and shiny.
This a wonderful recipe to use all the lemons I have left. The gummies are really good and a healthy treat. There is evidence that gelatin may reduce joint and bone pain, increase brain function and help reduce the signs of skin aging
YUM.........this is one I must make. Anything to reduce my joint and bone pain, and increase brain function is a MUST. My brain is going really fast. I love lemon, so I will be making this one.
